Singapore Noodles
i did it! looked, smelled, and tasted just like my local Chinese delivery, but customized for my tastes :) i'm a vegetarian, so i left out the meat and the fish sauce suggested by some others, didn't use onions or celery cause i just don't like them, and i used broccoli, carrots, and snow peas, sautéed in sesame oil...i was very liberal with the soy sauce and curry powder, and i added some crushed red pepper for an extra kick...this recipe is a keeper!

Vegan Hot and Sour Soup
I've made this several times now, and I think i've got it version is NOT vegan as I prefer to add a beaten egg at the end...I always add some bamboo shoots which I cut into strips, and the tofu I use is already cubed...I leave out some of the more exotic ingredients (no tiger lily buds or bamboo fungus) but I include everything else...this is a really yummy, cold weather type soup that I will make again and again

Butter Chickpea Curry
I would classify my first attempt as a success! I took most of the suggestions here...substituted sweet potato and cauliflower...used crushed tomatoes instead of tomato soup...used coconut milk instead of cream/reg milk...used a wee bit more spice than called for, esp. cumin...added some sriracha, also some peas/carrots...served over some jasmine rice...delicious and nutritious! and let me say this...if I can do it...anyone can ;-)
