I am a wife and mother of 2 adult grown girls. I love to cook but make the biggest mess doing so. I have been an insurance agent for the last 8 years, hoping to wind down some so that I can cook some more

My favorite family cooking traditions
We tend to have the same meals for Thanksgiving and Christmas every year by demand. I try to incorporate diffferent side dishes for a little change.
My cooking triumphs
I finally have all the gadgets that make cooking easier. Up until this last year I preferred to cut everything up by hand with a dull knife. I got the Professional Kitchenaid, a food processor and some awesome knives. Cooking now takes me 1/2 the time.
My cooking tragedies
Too many to count. Before I used the computer as my cookbook, I would leave items out all the time. I think that my worse tragedy though was when I was dating my husband, I decided to make him a meal, we had beef stroganoff, homemade rolls, salad and a cheesecake that had 8 packages of cream cheese. Needless to say, he was very gracious but full. He still teases me about the "heavy" meal to this day.

Unstuffed Cabbage
I have been making this for years with a couple of tweaks (sorry, I know I hate it when people do it!). Instead of the soup I use a 26 ounce can of tomato sauce and 1 can of stewed tomato's. I use 2 cans of water and also about a 1/4 cup of brown sugar. I also use a green pepper and saute that with the onion and a little chopped garlic (I sometimes use ground chicken too!) We call it inside out stuffed cabbage

Chicken Breasts Pierre
We really enjoyed this for dinner. I am trying to cook healther and the ingredients are stocked in my kitchen. Served with rice! Wonderful new edition to my cookbook

Veronica's Hot Spinach, Artichoke and Chile Dip
I loved it! If you love hot dip make this recipe. Not a good recipe for whimpy people that don't like it hot. I heated up in the crockpot to take to a party and served it with gluten free crackers....delicious (I do think that next time I will add some sourcream to make less thick).
