Snowy Boiled Icing

Reviewed: Nov. 25, 2010
There is nothing wrong with this recipe. It's a traditional boiled icing recipe which yields the consistency of marshmallow. This should nothing be used for intense decorating, borders, flowers, etc. I like to use this for coconut cakes when I'm not in the mood for buttercream. Thanks for submitting!

Southern Collard Greens

Reviewed: Jun. 18, 2010
I don't understand how a person says you should NEVER put this in that and yadda yadda. I NEVER ate collards with freshly chopped onions and tomatoes and my whole family from the south...it sounds good though but NOT a MUST :)! When you cook something cook it to your liking...you have to eat it! For those who are not familiar with collards...depending on how fresh your collards are, whether they are in season all are factors to consider. I have had some greens that are soooo tender I can cook em' in a short time (an hour or so). I have had green soooo tough I had to cook them overnight! It depends. Sometimes I add sugar to my greens (depends on the batch again). It's shouldn't be sweet however. I love to top my greens with peppered vinegar and I'm good to go!!! Have fun with your cooking! Don't get frustrated if you get a "bad" batch of greens (tough, real bitter, etc). this is a dish that is worth the effort. Good ol' comfort! One Love :0)

Homemade Chicken A La King

Reviewed: May 31, 2010
A dish will lack flavor if you DO NOT put seasoning in it. The recipe is fine. Cooking is subjective. Everyone's kitchen pantry is different. Add seasonings and spices to YOUR liking! If you taste your food as you cook you will know if you need to add more seasoning or not. If you want garlic powder, onion powder, cayenne, bay leaf or whatever you like...throw it in! Have fun cooking! You and your familiy are the ones eating it :0)

Oxtails with Gravy

Reviewed: Mar. 10, 2010
This happens to be a very good recipe for good ol' oxtails. Oxtails are fatty (for those who don't know) and are traditionally cooked this way. It is best to boil them first, to get rid of some of the fat. They will still have fat on them. Add tomatoes if you like or whatever! Normally, it ends up "stew-like" because of the cooking time and gravy. The meat should fall off the bone when eaten. I would love to hear other variations as far as gravy or sauce. I myself can't help but eat oxtails swimming in gravy! If you are overly concerned about the fat...don't make it. Thanks! Great recipe!

Pineapple Chicken

Reviewed: Aug. 29, 2009
I think the recipe panned out very well. I just added more things that I personally like. I don't measure much but this is what I did. I added some scallions, minced garlic, minced ginger, soy sauce, brown sugar and crushed red pepper. Jasmine rice is my favorite so it worked well with that. Thanks!
