Russian Mushroom and Potato Soup

I just made this recipe, and it was wonderful! I loved all of the vegetables, and the dill added a nice depth of flavor to the soup. I was going to add the flour and half & half at the end, but I couldn't resist trying the soup at that point. It tasted so wonderful that I didn't add the half & half. My husband, who is not a fan of soups, also loved this soup.

Chef John's Stuffed Peppers

Wow, this recipe was amazing! I love stuffed peppers, but my husband doesn't like them. This recipe had so many good reviews that I thought I would give stuffed peppers one more try for him. He loved this recipe! The supermarket didn't have organic ground beef, so I substituted ground turkey for the beef. The peppers were still delicious, and now I'm curious to try the recipe with beef next time.

Mexican Style Shredded Pork

This is one of the best and easiest recipes on the site. My husband said he will love me forever if I keep making this. I made the pork exactly according to the recipe, and I thought it was delicious. Instead of rice, we put the pork tortillas and topped with a little cheese. I couldn't find the chipotle in the supermarket, but I found it in a local Latin food mart.

Moroccan Salmon Cakes with Garlic Mayonnaise

I love this recipe - it is different than the standard fare and delicious. One piece of advice: buy skinless and boneless salmon. Otherwise, you'll spend half the preparation time picking salmon. I also use two full eggs instead of the yolks. That seems to help keep it together more. I've used fresh spinach in the past, and although it tastes delicious, it makes keeping the cakes together challenging. I also bake the cakes instead of frying them - it's probably easier in the end.

Stuffed Guinea Squash (Eggplant)

I've made this recipe before, and it is always delicious. The texture is a little strange, though. It's mushy, and it's not something I would serve guests because of that. Also, scooping out the eggplant is time intensive. When I've made the recipe, I have reduced the bread crumbs and cheese, and substituted olive oil for the butter (to make it a little healthier). Today, I altered the recipe even more to make it easier - first I chopped the eggplant into cubes and sauteed it with the onions. Then I added the mushrooms and some sausage. When those were ready, I added the bread crumbs and cheese and then baked for 15 minutes (adding more cheese during the last 5 minutes). The sausage was an amazing addition!

Linguine and Clam Sauce

I made a couple of changes to the recipe, and it was delicious! Both my husband and I agree that the recipe is a keeper. The first change I made was to add an additional can of clams (without the juice, though), as suggested by other reviewers. I also substituted chicken boullion for the butter - other reviewers had said the sauce was too buttery, and I wanted to cut the calories anyway.
