Rita's Eggs Strata

Overall I really liked this casserole. I did think it was a bit salty so that's the reason for the 4 star rating. Next time I'll reduce or omit the salt. I used a mixture of 2% and skim milk, reduced the cheese by 1 cup, and just buttered the bottom of the baking dish with 2 T of butter rather than buttering the bread. This was still very rich and my guests all complimented it and many went back for seconds. Thanks!

Chef John's Baked Eggs

One word - YUM!!! Made this for the first time last night and am tempted to make it again tonight. Hard to believe but my husband who likes everything said he "could eat it" if I made it again. In future I'll be making this fabulous dish just for me and he can have PBJ instead! The only change I made was to omit the heavy cream because we're counting calories. I did not omit the olive oil because it's so good and so good for you!! Thanks Chef John!!!

Old Fashioned Potato Cakes

I made these potato cakes to go with roast pork loin and sauerkraut - definitely a winner! I did reduce the flour to 1/2 cup and used less oil as others suggested and these came out perfect. I will probably add a bit more salt and pepper next time. Thanks !!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Love this recipe! I tried to make it as written but had to make some substitutions based on what I had on hand. I used peach preserves and brown sugar in the rub. For the glaze I only had 1/4 cup BBQ sauce, no ginger or cilantro and it still turned out great. Thanks!

Amazing Gluten-Free Layer Bars

Our daughter was recently diagnosed with celiac disease so gluten free cooking is very new to us. I wanted to have a GF dessert for her at a recent dinner and since 7 layer bars are a family favorite I gave these a try. I used GF ginger snap cookies as others suggested and everyone approved. Smoked Sausage with Pasta

My family loves this dish and if there are leftovers they don't stick around long. We enjoy it as written for it's great taste and simplicity. If time allows I sometimes beef it up a bit by adding onion and red & yellow bell peppers plus a couple of cans of diced tomatoes (1 fire roasted & 1 Italian) and a small can of tomato sauce. It's terrific with sweet Italian sausage too. Season with sea salt, pepper, onion powder, garlic powder and basil.

Carrot Pineapple Cake I

I made this cake for a family birthday celebration. Everyone loved it - several people said it was the best carrot cake they've ever had. I stuck pretty close to the original recipe but made layers so I doubled the icing and reduced the baking time. This is a keeper!!

Swiss Chicken Casserole II

I've made this several times and it's always a hit. I increase the soup to 2 cans and milk to 1/2 cup - I'e never had a problem with it being soupy as others describe. I also use an entire cylinder of Stove Top prepared per instructions but omit the butter. My family thinks I could increase the amount of stuffing even more. Next time I make it I plan to add broccoli or mixed frozen veg as other suggest. Love it!

Italian Bread Using a Bread Machine

Just made this bread for the first time and it turned out perfectly! I used 2 cups bread flour and 2 cups regular flour and reduced the salt to 1 tsp. The loaves didn't rise much in 40 minutes so I ended up heating the towels in the micro for 25 seconds and letting the loaves rise another 15 minutes - this helped quite a bit. My oven runs hot so I only baked them for 25 minutes. Thanks for a wonderful recipe!!

Microwave Spiced Nuts

Great - we love these nuts! I increased cinnamon to 1.5 t and added 1/4 t salt. I toasted the nuts ahead of time as suggested by others then microwaved for 4 minutes stirring every 30 seconds. Thanks for a fantastic recipe!!

Beer Brats

Best brats I've ever made. I used one bottle Modelo Negra and one bottle O'Doule's because that's all I had on hand. I cut back the pepper flakes to just a dash or two as we like to have our brats with spicy mustard so I knew we'd be getting enough of a kick from that. I cooked them the specified time (omitted grilling though) and it did not cook the flavor away as someone else suggested. We made open faced sandwiches using hoagies and sauteed onions and peppers .... to die for!

Angel's Old Fashioned Beef Stew

My daughter asked me to make stew "like Grama used to make" and this recipe did the trick. My mother was a big fan of herbs and spices but not in her stew. The only change I made was to use pearl onions I had in the freezer. Thanks, Angel!

Precious Pineapple Cake

Easy and great cake! We added one egg and reduced the amount of powdered sugar in the frosting to 3 cups. We didn't have any trouble with the cake falling apart - it was perfect - only trouble we had was fighting over the last piece. :)

No Bake Chocolate Oat Bars

These got rave reviews from my family and from me. I took the advice of others and decreased the butter by 1/4 cup and increased the peanut butter by 1/4 cup. Also used a mix of quick and regular oats and cooked the oat mixture a few minutes longer than called for. The suggestion to line the pan with foil worked out beautifully - just lift and cut. Thanks for the recipe and for the helpful reviews!
