Red Pepper Soup

Tasty! I only had 3 peppers, so I only used about 3/4 onion & tossed in 10-12 grape tomatoes that I needed to use up. I also peeled & diced a potato that I added. I used vegetable broth, omitted the heavy cream, & added a pinch of thyme. I like a bit of chunkiness in my soup, so I didn't strain it once I pureed it. Will definitely make again!

Baked Mac and Cheese for One

This was great! I did add a bit more macaroni (maybe more like 5 tbs.) I love peas with my macaroni, so I added a few tablespoons of frozen peas, too.

Feta Chicken Salad

Apricot Lentil Soup

I made this last New Year's Day & finally decided to make it again exactly 1 year later! I didn't use all of the dried apricots...now I wish I had. I'm not a big fan of cumin, so I only added a tiny bit. This year when I sauteed the onions & garlic, I also added a cut up chicken breast & added that to the blended along with everything else. The soup came out very thick. I love a thick soup, but will probably thin my leftovers out a bit with some chicken broth tomorrow.

Spinach Cheese Pie

This was great! I love the idea of quiche, but I hate eggs, so this was perfect for me! I didn't have any nutmeg, but I didn't miss it! I sauteed garlic, onion, some asparagus, & mushrooms that I added to the cheese & spinach. I agree with other reviews...about half of the cheese was enough. I did use all of the ricotta, but about half of the other cheeses. I love having an eggless quiche recipe now! Thanks!

Salmon Chowder

This was great. I love salmon, & I love, love, LOVE chowder & soup in general, but was never sure about whether I would like salmon chowder! I didn't have evaporated milk, so I used regular milk, I'm NOT a fan of dill weed, so I only used a tiny bit. I agreed with other reviewers...less cheddar was better! I didn't have any liquid smoke, but wish I had added that, as another reviewer had suggested.

Mango Sorbet

This was very refreshing! I used 3 very ripe mangoes. I didn't use all of the simple syrup, but I don't think I needed it. Another reviewer suggested adding some half-n-half; I think I may try that next time. Great recipe! Thanks!

Roasted Red Pepper Cream Sauce

2 thumbs up! This was great. I decided not to use jarred peppers, so I roasted my own. I only used a little bit of half & half and then just used skim milk for the rest. I had mine over cheese & spinach tortilini. Next time, I might just add a bit more garlic & pepper.

Zucchini and Corn Topped with Cheese

Not bad! It'll be better in a few more months when fresh tomatoes are in season! I used some canned tomatoes as well as a handful of grape tomatoes that I needed to use up. I also chopped up a handful of mushrooms & added some fresh garlic.

Portobello Mushroom Lentil Soup

This was good. I didn't have a green pepper so I used red. I wish I had doubled the mushrooms, though! I normally like sherry, but I didn't care for it in this soup. I'll just leave it out when I reheat my leftovers. Next time, I might even add some shredded chicken breast, but it was fine without it.

Blackened Chicken

Very good! I like the idea that one reviewer had of changing the serving size to 30 & keeping the mix in an empty jar. I'm definitely going to do that. I found a blackened salmon recipe on this site that had very similar ingredients. I'm looking forward to trying this recipe on my salmon. This is a keeper for sure.

Low Carb Cauliflower Leek Soup

Not bad! To save cooking time, I cut up my cauliflower & leeks & pulsed them in the blender a few times before cooking. Some of the veggies came out of the blender very finely chopped, while others were larger & more chunky. I added extra garlic, & will definitely make this again!
