About this Cook
My Mom loved to cook and feed anyone that walked through the door. I guess thats where I started loving cooking,and ofcoarse eating. I've been married to my wife for a year and a half,but,we've been together for 15 years. She likes to cook but not as much as me. I have one great son,32yo. The name 3legchicken comes from when someone gets one of my smoked chickens, I add an extra leg quarter and call it a three legged chicken.

My favorite family cooking traditions
Thanksgiving has always been a favorite.It's really the eating holiday.Also,once or twice a year I try to have a "seafood fest" with my local family and a few friends. Usually steamed blue crabs, shrimp, oysters,clams and mussles. Fried shrimp,scallops and buffalo wings.

Simple Artichoke Dip
This is a great easy recipe! I could almost eat it with a spoon. I only had store brand mayonnaise and after reading the importance of name brand mayo in some of the reviews, I decided to use half cup sour cream and half cup mayo with the full cup of parmesan cheese and 15oz. can of artichokes. It was awesome! Me and my brother ate the whole batch before it had a chance to cool. I guess if I was taking it to a party I'd have to triple the recipe. It went great with Melba toast. I'm putt'n it on the list and sending in a picture.

Southwestern Black Bean Stew
This stuff is so good! I've made this recipe twice and it turned out great both times. The only things I added was jalapenos to kick it up a notch and an onion cooked with the ground beef. My wife loves it and its just as good after freezing. I think it will be a regular in this home.

Corn Pudding V
This was so good! It was kinda between corn bread and corn pudding. I was able to turn it on to a plate and then on to another plate so it was right side up. I followed the recipe to the tee except for baking it a full hour the first time I made it. The second time I made it I thought I'd make it "my own". After reading some reviews I decided that jalapenos sounded great,then I add two beaten eggs . In the store I seen some Mexicorn,"perfect" and then decided to put it in baking cups (cup cakes). Well they stuck to the paper in the baking cups and the jalapenos and Mexicorn took away the great sweet corn pudding/bread flavor. I'd give "my own" corn pudd'in ***3 stars at best. I'll be making this again, probably before the weeks out, but I won't be changing anything except the cook time. Five Stars!
