So I see I haven't written anything in years!!!  It's been bumpy in my life.  My husband decided he just didn't wanna be here anymore, so he packed up the RV and moved back east.  I was left with my two dogs and a home to maintain on my own.  I'm not complaining, it has been a very liberating experience.  The sad thing is, I don't find myself cooking as much.  Cooking for one...not as exciting.  I'm coming up on almost 3 years since he left, and life is once again calm.  I do miss cooking, and have taken it upon myself to cook for friends and co-workers.  It's a win win!  So...I'm ready to dive back in!   Big things are getting ready to happen, and I can't wait!

Train yourself to love left-overs-or learn how to make simple changes so they taste/look different. you can save so much $$ w/at home cooking & then you know exactly what is in your food.

My family is grown, but I still enjoy my own lasagna, chicken/cheese casserole and several other "large portion" recipes I used to make for all of us (4 boys). Buy a lot of single serving size containers and cook the meals you loved before, when there were two of you to cook for, then have one or two meals of what you make, and freeze the rest in the individual containers. Once you get the hang of it you'll love it. Gives you a variety of meals, and when you feel like a dinner of lasagna, it's there in the freezer.

GOODEATS---thank you! You are so right! Not to meantion the weight-loss that comes from preparing your own food. I had gotten lazy there for awhile, too much eating out. SWEET COOK---that is a fantastic idea! I'm going to give that a try. Sounds like a wonderful time saver!

Congratulations on your FREEDOM! I hope you'll be as happy as I have been answering ONLY to ME. Cooking for friends can be a lot of fun, and you only have to do it when YOU feel like doing it. You can cook for your dogs, too! Make treats & biscuits for them, if not all their food. Feed hummingbirds! Feed all the birds! You'll have more company than you know what to do with...You'll never be lonely if you love yourself & stay interested in your own life - don't look for someone else to make you happy. YOU are your best friend. Wait a minute - did you come here for a lecture? OOPS! Sorry...I just meant to encourage your cooking adventures and agree with sweet cook - leftovers are great! You can feed them to others or hoard them for future times when you don't feel like cooking (or get sick). I always try to keep some homemade soups & "TV" dinners in the freezer, as well as some cookies & muffins. PS I hope your ex enjoyed his winter back east! Keep posting!

Scottersandi...OMG...I'm laughing so hard right now! Sorry it took me so long to comment, but as you know it's a lot of work taking care of a house alone. No lecture at all, I totally agree with every word! So, let me ask you this. Your screen name? Please tell me you ride motorcycles??? We might just something else, besides cooking, in common. :-)

About Me
My life is pretty simple, and boring. I love my dogs, cooking, riding my motorcycle any chance I get...usually to eat. I must be part gypsy, because I love to be out on the road. I live near the California wine country, so I also enjoy wine tasting...and of course all the great food the Napa Valley has to offer. I have recently discovered micro beers, they are fantastic, but not at all good for my waistline....LOL!
My favorite things to cook
I don't really think I have a favorite...I just like to cook. I enjoy trying new things, haven't found anything yet that I wouldn't ever want to do again.
My cooking triumphs
I usually try to keep it simple, but I just mastered the Apple Pie, so I'm happy about that.
My cooking tragedies
I have yet to make the perfect artichoke...but I just found a great recipe for a garlic grilled one, so I hope to change that soon...
