Banana Waffles

I'm not a huge fan of baked bananas, but I thought these were pretty good, and my kids really liked them! I followed the layering technique as described, and didn't have any problems with it. I did oil up my waffle iron pretty well, though. I didn't have any cooking spray, so I poured in a teaspoon or two of grapeseed oil, then turned it a few times to make sure both sides were coated. I may try adding it to the batter next time. A waffle batter really should have enough oil that you don't have to oil the iron at all, so I'm giving this a four as written. I also made a few ingredient substitutions based on what I had available. I used half cake flour and half whole wheat, and mixed up some powdered milk instead of using fresh.

Blueberry Oat Bars

Delicious! These were pretty easy to put together, and taste great. I and my 3 kids under 6 devoured them. I accidentally used 2/3 cup of sugar in the blueberry mixture instead of 1/2 cup and it came out just fine. I'm looking forward to trying this with other fruits. It would be great with a little added cinnamon, too!

Turkey Drumsticks

This was really tasty. There were plenty of tomatoes, onions, and spices left over in the pan, along with the juices from the turkey. I put all of that in the blender and it made a pretty decent pasta sauce for another meal.

Amy's Garlic Egg Chicken

I can't say enough good things about this chicken. If you like garlic, it's the recipe for you. It tastes great served with a milk gravy like chicken fried steak.

Quiche Seville

This tasted pretty good. I left out the French fried onions since my husband doesn't like them, but I think it would have been better made exactly according to the recipe. The Worcestershire sauce was a nice touch.

Marshmallow Fondant

I used this to make a helicopter-shaped cake for my son's second birthday. It made a nice, smooth surface, although it was a little more stretchy than I'd like. I'm sure there is a learning curve to it. My family loved the taste of it, too.

Baked Slow Cooker Chicken

I'm not sure if my Crock Pot cooks too hot or what, but by the time this was ready to serve, it was really dry. I should have followed my instinct and pulled it out a couple hours early.

Cube Steak Parmesan

This tasted delicious! However, it was a little tough. I'd like to try it again, slow cooking the steaks in the tomato sauce and in a covered dish--or on the stove top.

I've made this recipe twice now, and it has already become an "old standby." I will be making it for years to come. One hint--if you don't stock beef boullion granules, you can substitute beef stock for some of the water.

Mini Cheesecakes

This is a nice basic mini cheesecake recipe that can be adapted in countless ways. I added canned pumpkin and pumpkin pie spices. I also used gingersnaps for the crust. The individual portions were nice for traveling to multiple Thanksgiving dinners because I could make just one batch and not have to worry about taking a fresh, uncut cheesecake to each place.

Pecan Pie IV

This was delicious! I made it with crushed pecans instead of halves and poured it into mini muffin cups lined with pie crust. Everyone loved the taste at my family gatherings.

Chicken and Biscuit Casserole

Based on taste alone, I would give this recipe a 5. However, I had some trouble with the biscuit part. When I mixed the portion of liquid to baking mix called for in the recipe, it was far too sticky to make balls. Instead, I just dropped portions of the biscuit dough on top of the chicken mixture. It came out just fine. Even my picky husband loved it.

Overnight Caramel Pecan Rolls

I made these as a special breakfast for Christmas morning. They were pretty good, although a little heavier than I would have liked. This may have been because my yeast was old. I also would have preferred more sticky goo in the bottom of the pan.

This was pretty good. I will probably make it again, but I like a lot of spice, so I may add some garlic or something next time around. It was easy, quick, and allowed me to put a nice meal on the table, even on a busy weeknight.

Vegetable Pizza I

I tried making this as a fun, healthy lunch for my kids and me. I halved the recipe, but I wish I had done as NICKI0824 suggested and made a 9 x 13 from one roll of crescent rolls and one block of cream cheese. The cream cheese mixture was a little thick, but it was still delicious. While not necessarily low calorie, this pizza is full of nutrients. My toddlers gobbled it up, and so did I!

Cola Pork Chops

The sauce was pretty flavorful, although I might have preferred it a little thicker. The pork didn't come out incredibly tender, but I think it may have been the meat itself. I will try the recipe again with fresher pork chops.
