Chicken Kabobs Mexicana

These were okay, the marinade was too acidic for me. I added some Worcestershire sauce which mellowed it some. Next time I will reserve some marinade to brush on the veggies while cooking.

California Kabobs

We really enjoyed these kabobs! I loved the flavor the lemon added to the beef and the fact that the marinade was not too oily. We used red and green peppers, red onion, and whole baby portobello mushrooms. Served over brown rice.

Pesto Cheesy Chicken Rolls

So simple! I seasoned the chicken with salt and pepper and then sauteed the rollups to a nice golden brown before finishing off in the oven. Yum!

California Halibut Bake

This is something different to do with halibut. I season the fish simply with salt and pepper and then put on the topping. Pretty good recipe.

Italian Spinach Salad

I didn't make this exactly according to the recipe but I still give it 5 stars because it was really good. I used spinach, two boiled eggs, parm cheese, and sauteed red onions. Topped with creamy balsamic vinaigrette.

Hearty Halibut Chowder

This was pretty good, but I changed it a lot. I used tilapia because it was much cheaper, but I'm sure this would have been much better with the halibut. I also used 1 cup skim milk and 1 cup heavy cream. Added a box of frozen corn (which was a great addition) and some fresh crabmeat (which was a waste because the crab was overwhelmed by everything else). I used the food processor to hack up some baby carrots and didn't add any cheese. Sprinkled in some Old Bay seasoning, but next time I will experiment with some more herbs and definitely season the fish before adding it to the stew.

Sweet Potato Pie from EAGLE BRAND®

I had never made a sweet potato pie with sweetened condensed milk or orange zest, but I tried this out for Thanksgiving and we really enjoyed it. I doubled the recipe and had enough pie filling for two deep dish pie shells. I'll make it this way from now on!

Orzo with Parmesan and Basil

This was pretty good, even though I had to use dried basil. My orzo scorched and a good bit of the pasta was stuck to the bottom of the pan. so next time I will watch the time and temp more closely. As an afterthought, this might be nice jazzed up with some chopped walnuts.

The Best Banana Pudding

This was excellent! I used 2 small boxes of pudding (3.4oz) and 3 cups skim milk. I accidentally used only a tsp of vanilla instead of a tbsp, but it still tasted great! And I only used 4 large bananas, I can't imagine needing 14! Thanks for a great recipe!!!

Famous No Coffee Pumpkin Latte

I used 2 cups skim milk and 2 cups heavy cream. Added some nutmeg. It was very creamy and comforting. My husband really liked it as is, but I def would like to add coffee next time.

Paprika Chicken with Mushrooms

This was very good and easy. I seasoned 6 thinly sliced chicken breast pieces very generously with the spices and sauteed them in butter and olive oil until they were a lovely golden brown. The mushrooms and onions were a great addition. I would have liked for there to be more of a "gravy". Next time I will add some chicken broth/white wine as other reviewers did. Served with brown rice and broccoli.
