My cooking triumphs
I make the best baked New York Cheesecake, and I have created my own and as everyone says the best crockpot Beans and Greens. I put together a cookbook of collected recipes for our Villages Sesquicentennial Celebration as a fund raiser and did very well.
My cooking tragedies
I once made a pot roast and the gravy turned out pink due to red wine in the cooking liquid. It looked terrible but tasted wonderful.

Shredded Beef Tacos with Lime
My sons favorite meal is tacos so he was hesitant, but I make this in my crockpot. Wrap up the beef with marinade in foil, not necessary to marinate ahead, and put the whole thing in my crock. Cook 8 hrs. on low, then remove beef and shred, put back in crock with juices and serve. It is delicious, easy and great left overs. We top with a slaw of shredded cabbage, tossed with red wine vinegar, a dash of sugar, salt and chili powder to taste. Easy delicious meal, easy clean up.

Cheese and Bacon Potato Rounds
I used pre baked potatoes, we like extra virgin olive oil instead of butter but everything else the same, bake 10-15 mins, then top with cheese, scallions, and reduced fat bacon bits. Bake until cheese is golden brown!

Corn and Black Bean Salad
I gave this 5 stars because this is one of my favorites salads of all times. I make this by grilling 4 - 5 ears of corn without husks and no oil, till lightly charred then cutting off the cob. I then add red 2 tbls. red wine vinegar and the juice of a lime instead of balsamic. Grilling the corn only takes a few mins. and realy adds to the flavor. We like it to top fish and chicken or by itself. I take it to alot of parties and am always asked for the recipe.
