Baked Potato Skins

Reviewed: Jun. 15, 2012
FYI baking a potato does NOT require tin foil-- using tin foil creates a steamed potato. Bake potatoes sit in an oven for about 40 mins at 375 degrees, coated in either butter, oil, pam, or a mixture of both. This is the best way to get crispy skin. That being said-- this is the absolute easiest and best recipe I've come across for potato skins. I've literally been using it for years with minor mods for flavor, caloric accommodation, etc. Make sure you BAKE the potatoes instead of steaming them!

Best Whole Wheat Chocolate Chippers

Reviewed: Apr. 20, 2012
These are HANDS DOWN the most amazing cookies ever. I even made extra and froze them by the spoonful, stored them in the freezer, and just pull them out when I feel like having a few. I leave them on the cookie sheet for a few minutes while the oven preheats and bake as usual. Everyone has different taste so I won't knock those who gave poor reviews; however, I am in love with these cookies and thrilled to successfully use whole wheat flour in a baking recipe!

Feta Cheese Turkey Burgers

Reviewed: May 5, 2011
Unbelievably delicious! I used reduced fat cheese and added breadcrumbs to make this a loaf (cooked in the oven for thirty minutes at 375). Hubby and I devoured half before it made a plate! Perfect--

Hands-down the best meatloaf that I've ever had! I've even subbed turkey in a pinch and it still came out wonderful--

Jiffy Jambalaya

Reviewed: Jul. 14, 2009
This recipe is delish--and great for anyone who participates in Weight Watchers! I cut the oil and used Pam cooking spray instead, added about 1/2 cup each of black/pinto beans to pump up the fiber for lowering points, and what a low-cal meal! Filling, delicious, and low calories!!

Teri Tips

Reviewed: May 12, 2009
Had leftover filet that had been sitting in the fridge and found this recipe to use it up. So glad I did! The sauce is divine-- drinkable, if you ask me! I sauteed some green beans with a little Pam and salt and added them to the mix. Truly amazing! Will be a staple in my weekly rotation! My daughter said it reminds her of a P.F. Chang entree...

Steakhouse Wheat Bread for the Bread Machine

Okay, this recipe is a-ma-zing! I did add a little bit of molasses for flavor/color. Topped the bread with a simple honey butter. Wow!

Sweet and Sour Meatballs II

Reviewed: May 12, 2009
Loved this recipe, but too much cornstarch-- I cooked the meatballs in the oven at 350 degrees so that they would brown all over and cooked the sauce separately in a skillet with half the cornstarch and it thickened just fine. Added the meatballs and tossed them around a bit (3-5 minutes or so) and laid them atop a bed of brown rice--yummy!!

Banh-Mi Style Vietnamese Baguette

Reviewed: May 12, 2009
I love vietnamese food, so when I saw this recipe I had to give it a try. It is a keeper! The only change that I would make is the bread. The baguette was too thin to load all of the ingredients properly. I tried it again with a french bread loaf and it was truly amazing. The flavor is very unique and a must try if you like vietnamese food...

Loved this recipe; however, I knew to roast the nuts beforehand! The savory taste of these nuts cannot be beat!

Best giardinera that I've ever had...super easy to make. The only downfall was that by two days time, half of it was gone! Thanks!

Strawberry Cream Freeze: Serve it Your Way!

Reviewed: May 12, 2009
This recipe is amazing!! I even subbed low-fat ingredients, i.e. soy cream cheese, reduced fat whipped cream, etc. and it still came out fabulous! Served the freeze in waffle bowls for Mother's Day and my friends begged for the recipe!
