Peanut Butter Cup Bars

These are excellent bars. They take more than 10 graham crackers to cover the bottom of the pan, and I would suggest using a pizza wheel to cut them. I didn't have any of the problems other reviews mentioned. They took next to no time to make and were FANTASTIC. I used only organic ingredients.

Crumb Topping for Pies

Blackberry Pie IV

This is a good berry pie recipe. I'm going to try it with raspberries next. I gave it four stars due to the changes I made. Firstly, I added lemon juice and zest from one lemon to bring out more of the berries' flavor. Secondly, I don't like double crust pies, so I made a single crust (see Laura's recipe: "No-roll Pie Crust II.") and scattered a crumble over the top. Finally, as other reviewers have noted, it needs to be baked at least 45 minutes. I have no idea how the other reviewers got by with 30 minutes! The pie was EXCELLENT.

All-Star Veggie Burger

I was disappointed in this veggie burger. It really needs flavor. Next time I would add sauteed onions and garlic (not powdered),some vegetables (e.g., carrots, zucchini), and different spices. As it is, it tastes like bland, "hippie" food from the '70s. I have a suggestion for those who are having trouble with the tofu: Cut the tofu into four equal sections, place it on a baking sheet, put another baking sheet on top, then add several heavy books (dictionaries work well). Press it in this manner for an hour before crumbling it and adding it to the mixture. This process eliminates quite a bit of the water.

Easy Mint Chocolate Chip Ice Cream

I will never buy mint chip ice cream from the store again. This recipe is outstanding. I used organic ingredients and made one change. Instead of chocolate chips, I shaved chocolate from a very dark chocolate bar. It gives the ice cream a more gourmet appearance and is very tasty. I have also made this ice cream with 3 cups whole milk and one cup heavy cream, and it turned out well. (P.S. I ignored the green food coloring suggestion for health and aesthetic reasons.)

The Best Lemon Bars

I made these lemon bars with 2/3 lemon, zest of one lemon, and they still were not lemony enough for me. Also, the crust is a bit much - very dense and overwhelming. I'm going to continue hunting for a better lemon bar. That being said, I took them to a party and they were gone in minutes.

Unbeatable Pecan Pie

People rave about this pie when I make it. I made a few changes. First of all, I use only organic ingredients. Secondly, I substituted organic brown rice syrup for the maple syrup. Then I upped the sugar to 3/4 cup to compensate for not using maple syrup. And, finally, I used Laura's "No Roll Pie Crust II." Be sure to bake it in a Teflon or silicone pie pan. After several successes with this recipe, I tried an aluminum pie pan and the pie never set (odd, I know).
