Big Soft Ginger Cookies

Loathing the dry grocery-store ginger snaps always around the house when I was young, I thought I hated ginger cookies... Until this recipe. These cookies are soft and chewy and have an absolute exquisite balance of flavors. As others have said, though, it's good to let the dough chill for awhile otherwise getting them on the cookie sheet is a HUGE mess. I bet they'd bake the same with dough at room temperature but if you can spare yourself the fuss, why not? A hard lesson for me with this recipe is to watch them very, very closely in the oven... there's less than a minute between perfect and inedibly hard, and the difference is very subtle. You'll have to start pulling them out and giving them a good look every minute or so toward the end of baking. If you time it right, though, these are pretty much the best thing ever.

Grilled Rosemary Pork Chops

We don't like to grill often, so we made the same marinade (adding a tablespoon of chopped garlic and a tablespoon of time, as one of the below reviewers recommended), scored both sides of the pork chops, and let it marinate for six hours. Then we cooked them--carefully--in the pan, and they came out AMAZING. Tender, flavorful--everything combined beautifully. Only one caution--we didn't find them to be too salty, but we really enjoy salty foods. Those who are less into salt or are watching their sodium might want to cut down the amount of soy sauce used.

Brown Rice Black Bean Burrito

Reading everyone else's positive reviews, I'm wondering if I'd done something wrong. It was palatable, but very bland. I ended up adding more cumin and more chili powder, and threw in salt, paprika, and cayenne in addition--still seemed pretty flavorless. This is what I'd view as a great starting recipe, but the flavoring needs a lot of work.

Pumpkin Cookies I

I was looking for an eggless pumpkin cookie recipe for Thanksgiving and these did the trick. They were indeed very cake-like, moist, and light. Like others, I used brown sugar instead of white, and halved the butterscotch chips. I also added a 1/2 teaspoon of nutmeg because I am always looking for an excuse to use my favorite spice. I have mixed feelings about the butterscotch chips. I really love butterscotch, but definitely feel that the pumpkin played second fiddle here, even with the portion halved. If I wanted to make a super pumpkiny cookie I'd probably skip the butterscotch chips next time. Oh, and having misread the recipe, I dropped them as tablespoonfuls and they still came out beautifully but had to cook for much longer, closer to 15 minutes. As they didn't spread or rise at all, I couldn't imagine them as teaspoon cookies--it seems they'd be tiny.

Misti's Chicken Marinade

On the one hand, this marinade helped to keep the chicken very moist, even though I cooked it in the pan, which usually dries it out. But the flavor was very bland.

Pesto Chicken Florentine

We LOVED this. I've been looking for a good florentine recipe for a long time. The only thing I will change next time is to double the amount of spinach; by the time the spinach cooked down there wasn't much left--but other than that, a really delicious, easy-to-prepare recipe.

Honey Barbecue Sauce

made this and used it to baste chicken breasts. It wasn't the sweetness itself that bothered me--I like very, very sweet bbq sauces--but rather a lack of complexity other than that slightly tangy sweetness. I thought either a spiciness or a smokiness would have complemented it beautifully but without either it just tasted rather bland.

Alan's Ultimate Bran Muffins

If you're wanting a soft and sweet dessert muffin, this isn't the recipe for you. These muffins are only subtly sweet and definitely dense. Once or twice they've come out drier than I'd like. But the lack of sugariness is made up for in flavor complexity (especially if you toss in cranberries instead of raisins!) and they are really filling. Getting enough fiber is a challenge for me, since a lot of bran- and fiber-laden foods taste like sawdust, but this is a wholesome and tasty way to do it. I make these all the time, following the recipe almost exactly. Like I said, I sometimes throw in cranberries instead of raisins, or even mix them, and I always skip the malt barley flour. It's just not something I keep on hand, and I've found there's no significant difference in taste without it. Really excellent with a cup of strong coffee.

Tony's Summer Pasta

I made this exactly as the recipe said and it was GREAT. All the flavors complemented wonderfully, and it was even better cold the next day. A warning, though--while one of the things I loved about it was all the garlic, it may be too garlicky for those who are not huge fans of it.

Black Bean and Corn Quesadillas

The combination of the brown sugar and the cheese made me queasy, and on top of that I found it rather bland. Next time, I intend to skip the brown sugar, add more salsa, and maybe add a mix of cumin, red chili powder, and minced garlic.

Actually Delicious Turkey Burgers

I make these at least once a week. I add a splash of Worcesteshire (?), use crumbled toast, and use the whole eggs--everyone loves them. I don't think they taste like beef, but that's fine, because turkey is delicious.

Simple Turkey Chili

Pretty good. I added a can of corn, a can of black beans, a bell pepper, and a squash, because I prefer super-chunky chili. I found the two tablespoons of chili powder a touch too spicy, hence the four stars, but that may just be a matter of personal preference.

Roasted Garlic Mashed Potatoes

After reading all the positive reviews, I wonder if I did something wrong--the potatoes were grainy and dry, and I had to add twice the butter and milk the recipe calls for. Perhaps it's a matter of personal preference? But the amount of garlic and parmesan was perfect, and I appreciate this as a good basic recipe which I will modify in the future, particularly remembering to add 1 cup of milk and four tablespoons butter.

Marinated Rosemary Lemon Chicken

Cranberry Orange Oatmeal Cookies

Came out of the oven with a wonderful texture--chewy and soft, almost cake-like. Delicious cookies, but I'm only giving four stars because I had to double the amount of both orange zest and orange extract to get the orange flavor to stand out in the cookies.

German Potato Salad

Great. Next time, though, will want to decrease the amount of bacon grease used in the dressing... it was great the night I made it but the next morning it had gotten clumpy and congealed and did not reheat well. Other than that, great recipe. Will try next time with cider vinegar and grilled yellow onion.
