Enchiladas Suizas

This was amazing good! Who knew it could be so easy to make your own salsa verde?! I didn't have any fresh green chile peppers but used 2 small cans of them and added half a green pepper minced fine. I used a rotisserie chicken and loved the ease of it. I totally forgot about the olives and tomatoes at the end but they were not missed in the slightest. Yummy Hispanic comfort food! Loved it and will make again repeatedly.

Chicken Tortilla Soup I

This was good and we'll make it again, but with modifications for personal preference. In our opinion, this was way too tomato-ey. I plan to used canned diced tomatoes next time. Enjoyed it otherwise.

Quick and Easy Pizza Crust

For what I wanted, this was perfect. I was looking for pizza crust that could be made at the last minute and not have to rise for a couple total hours. This was it. Simple, common ingredients, tender results. Flavor is no better (or worse) than the crust you make from a pouch. Will make this again.

Pasta with Peas and Sausage

Nice comfort meal. Nothing fancy, just warm and cozy. Comes together quickly for a fast meal after church or a busy weeknight. Have made this a few times. This time I used diced up kielbasa for the sausage and melted the cheese in with the sauce, with extra cheese to grate on the top for any who desired.

Chicken Noodle Casserole

Another reviewer described this as thick creamy chicken noodle soup. Perfect description! Nice warm homey meal for a rainy evening at home. No strong flavors at all. Some may call it bland but I call it homey. Tasted good to 3 tired adults. When the kids are here, I may jazz it up with more pepper, garlic, and savory, and would consider bread crumbs on top.

Pepperoni Cheese Ravioli

Pleasantly spicy. After reading the reviews, I made half again the amount of sauce (but did not increase the cayenne!). It was extremely very creamy. When I make it again, I may not increase the sauce to see how it goes.

Creamy Scalloped Potatoes by Daisy Brand

Incredibly creamy! The sauce could make an old shoe taste good. I didn't have enough cheese so blended the asiago with cheddar and swiss, approx 1/2 cup of each. It was wonderful. I added diced ham to make it a main course. We had no leftovers.

Stuffed Hot Peppers

Spicy and creamy all at once. Very difficult to get the cheese down to the bottom of the pepper without a pastry bag. Next time will cut it down the middle and make canoes. My cheese did not melt well but I wonder if it is because I used the lowfat cream cheese.

Sweet, Sticky and Spicy Chicken

Very tasty and not at all spicy. Strongly recommend doubling sauce if you want any to go over the rice. I listened to previous reviewers and dredged chicken in flour which I will NOT do next time. Made a very tasty paste instead of sauce but since that was my fault, I'm not decreasing the number of stars.

Even my picky eaters liked this! Due to those picky preferences, I left out the mushrooms and stirred the cheese into the sauce, but made no other changes. Very creamy. Will make again.

Spicy Southwestern Slaw

I was looking for a coleslaw without mayo when I found this. The spiciness was a hit with the men in my family. Not so much the girls. Couple hints .. unless you truly are a fire breathing machine, there is not near enough slaw for the amount of heat in this recipe. I followed the recipe exactly using 3 cups of a bagged slaw mix ... and ended up using 2 pounds of bagged slaw to make the heat more palatable. This would be awesome on top of hamburgers or hotdogs.

Melt-In-Your-Mouth Meat Loaf

Most slow cooker meatloaf recipes have you making foil balls or put foil strips around the loaf for lifting purposes. Because that seemed a hassle, I'd never made meatloaf in my crockpot before. This was wonderful!! I used extremely lean beef and wonder if that was why I had so very little grease in the bottom but this meatloaf was moist and delicious! I put it on high at 6am and it was perfect when we came home from church at noon. As a time saver, I had premade the sauce before we left. I put the meatloaf on the serving platter, covered it with the sauce, and popped it under the broiler while I put the rest of the meal on the table. Remember things don't brown so well in the crockpot. Don't be alarmed at the anemic looking meatloaf. It is perfect with the sauce. I surrounded the meatloaf with cubes of potatoes and carrots which made this a pretty perfect crockpot meal.

Acorn Squash with Apple

First of all, THANK YOU for the peeling the acorn squash tip!!! That was awesome! I loved this recipe. It just tasted like fall. Nice nutty squash with sweet apples and a titch of cinnamon. Deliciousl! I made a double batch but in 2 separate bowls - one with nuts and one without for non-nutty daughter. Both were equally good. Keep an eye on your squash. Depending on how fast your squash cooks on the stove, 15 minutes in the microwave may be too much or not enough.

Baked Pork Chops I

Nice flavor, nice meal. Would recommend using a thick cut of pork chops, though. I use as few processed foods as possible and made my own cream of mushroom soup instead of using canned. Makes "almost" enough sauce to serve over potatoes or rice.
