Quinoa and Black Beans

This recipe is fantastic! I leave out the corn because I don't care for it in my dishes. Otherwise I make it exactly as written. I made this for my mom who's on a gluten-free diet and for my friend's family who's mom has cancer and is on a high protein, low fat diet. They all raved about it! I consider it an especially high honor that the meat-lovers who ate it said they didn't even miss the meat! What a find, thank you!

Vegetarian Chickpea Sandwich Filling

I loove this recipe! Being recently diagnosed w/ celiac disease (and I'm vegetarian), I needed some high-protein vegetarian meals and I can't get enough of this one! I use it with gluten-free crackers or bread. I usually add a little cayenne to the mix to spice things up a bit. So fast & easy to make and so good. Thank you so much for this recipe!

Chili Rellenos Casserole

I made this recipe as presented and it is FAR too soupy. Listen to the other reviewers and don't use the other 1/2 cup milk! It would also be better to add in more flour & another egg to make it more substantial. Enchilada sauce instead of tomato sauce is another must. Then it is a very tasty recipe!
