Mom's Country Gravy

I've never had the best luck using vegetable oil for this, as it seems to me as though unless it's super fresh the taste goes off. Nothing nastier than rancid veggie oil. However, rather than butter what I've found does work well is butter-flavored shortening. Of course bacon, burger or sausage grease is still the best!, but shortening is a good fall-back. I've had good luck adding either a bit of garlic, sugar and sage (sausage hint) or cayenne pepper, as well. Normally I'll also be browning some finely diced onion with the flour.

Super Sausage Gravy w/a bit more kick

Adding the garlic onion and a dash of cayenne definitely makes this. Rather then dried onion, I usually dice some fresh onion very finley and almost carmelize it with the sausage and flour cooking before adding the milk. Gives a nice kick.

Golden Peach Pork Chops

OK, so I had to mess with the recipe :) Skipped the tomato sauce, used country style ribs and fresh peach quarters, added some garlic powder and thin sliced onion, and gave it 3 1/2 hrs in a 350 oven. Really delightful.

Glazed Pork Chops

With apologies to Campbell's, lacking a can of French Onion soup, I used left-over beef gravy from the Christmas roast, sauteed some sliced onion (and diced mushroom bits) in first the oil and then the added brown suger, and let the chops simmer in the mixture until tender. If handy, a splash of red wine would be nice. Tasty dish, and one I will make again.
