Impossibly Easy Mini Cheeseburger Pies

As someone else mentioned, this is a great springboard recipe. I added crumbled bacon, chopped dill pickles and garlic and onion powder. I intend to make this again, this time with ground lamb and curry... chicken and celery...turkey and cranberry sauce. What a great way to use up leftovers, and the kids loved it! Thanks!

Chocolate Cherry Upside Down Cake

Made it exactly as specified, and topped with homemade whipped cream. This is now the family Black Forest Cake. Top marks for simplicity without relying on boxed cake mix. A winner! Thank you Janice.

Banana Loaf Cake I

I was drawn to this recipe because a) it uses 3 overripe bananas, which I had and b) the pic showed muffins, which I thought I would make. In the end, though, I made a 5x9 loaf. I added 1/4 c. each chocolate and peanut butter chips. I also used 1/2 c white and 1/2 c brown sugar as suggested by another reviewer. Within an hour of coming out of the oven my 5x9 had become 5x2, and I was asked to make this again. Many thanks for an easy recipe, Sandi!

Salmon with Dill Sauce

FAbulous!!!! I seasoned the salmon with a little Old Bay and Garlic Plus as well as the dill. I accidentally put more sugar than called for, and one daughter complained the sauce was too sweet but my other daughter and I polished it off. I'll make this again, next time I'll start with the requisite amount of sugar ;) and take it from there. Thanks, Janet!!!

Pork Tenderloin with Dijon Marsala Sauce

My 11 yo asked me to give this 10 stars. Even my 5 yo liked it and asked for more sauce on hers. I used a semi-dry Madeira wine (what I had) and 35% cream, though I only used 1/2 cup wine to 1 cup cream. 2 Tbsp Dijon in the sauce (gotta get my glasses checked, I guess!) but in fact that was perfect for us. I also forgot to slather the mustard on the pork; I just used pepper on the meat during cooking. Plus following another reviewer's idea, I used the same skillet to make the sauce as the meat rested. Anyway it was grand and we all decided this is a definite keeper! Company-worthy, tastes fancy-schmancy, but so simple to prepare, you can actually enjoy your company when you serve this dinner. I'll probably be using this recipe over the holidays when the big family comes over. Thanks Koalagirl! :)

Broccoli Cheese Casserole

As is, 4 stars. With one reviewer`s suggestion to fry up some cheese cracker crumbs as topping, + another's suggestion to add milk (it's kinda dry unless you cream it up a bit), it's 5 stars, the kids loved it. Of course I also added some seasoning: garlic powder, worcester sauce and a drop of white wine to the cheese-soup mix, and parsley and paprika to the crumb topping. Will make again and again, I'm sure, cause it's easy! Thanks Paula for sharing.

Daria's Slow Cooker Beef Stroganoff

I used red wine instead of white, and had cream cheese, but no sour cream. No matter, it turned out so good my 11-year-old is right now having it for breakfast, and my 5-year-old exclaimed !mm! smells good! when she smelled the heated breakfast. Thanks Daria, in this house, this one's a keeper! UPDATE: Actually that 11-yr-old wanted it again, but I had no mushrooms or c of m. So I made it using celery and c of celery, again no sour cream, so quite a departure from the original stroganoff, but I thought I'd share this tip because it was pronounced "even better than the other day." So there you go, two variations on a great original. Thanks Daria!

Asian Chicken and Rice Bake

Ugh. I didn't think much of the ingredients as they were listed and wondered how the heck they'd be Asian, and you know what they say - I should have gone with my gut, because this recipe sure didn't. Wow, I have never given a recipe one star before, but in all honesty I'd hate to mislead anyone reading my review, so here it is: One child took one bite and left the rest untouched, the other child ate hers and asked me not to make it again. I should mention I made a vegetarian version, i.e., broccoli and no chicken, and per another review had to cook it the full hour to get the soup cooked into the rice.

Zippy Skillet Rice

We thought it was great! Of course, I couldn't make it exactly... because, unbelievably, I am out of chili powder (gotta remedy that STAT) but I only discovered this as the rice and tomatoes were simmering, so I kinda faked it with double the cumin, plus 1/2 tsp oregano, some cayenne and garlic and onion powders, the rest as stated, and everyone loved it, to be added to our rotation! Served with barbecued giant shrimp and scallop skewers.

Sarah's Rice Pilaf

I love rice, my kids not so much. I made a double batch of this for the four of us. Had I made a single batch, there would be no leftovers - so I'm glad I made extra, for my lunch tomorrow. I read all 101 reviews and considered adding some veg due to reports of blandness, then compromised by using vegetable broth, a brand likely only available in Quebec though, a dry mix chock-full of dehydrated vegetables, and that's how I'm making it from now on. Thanks for a great idea, and my apologies to the SF treat people - this is as someone already said 100X better.EDIT JAN 4: I've made this again and again, and we've found that we like it even better using fine egg noodles (like in Ricearoni) although of course orzo is excellent too. At different times I've used curry, coriander, dill, garlic, no garlic, onion, no onion, chicken bouillon, veg bouillon, beef bouillon --whatever suited the main dish, and it's really a flexible, go-to recipe in our house. In fact, my kids now love rice and ask for this. Thanks again for posting!

Ground Beef Noodle Casserole

I would give this 4.5 stars with the changes I had to make. I relaized too late that I had no spag suce (how'd that happen??) So I had to use Cream of Tomato and more half-and-half. I also used fusilli because I had no egg noodles. The kids gobbled it up. I might like it better with the actual spag sauce the recipe calls for; I don't know. I made it for the kids, though, and they loved it.

Orange Spiced Carrots

These were great! Instead of nutmeg I used allspice and served them with ham and oven fries. I salted the boiling water for the carrots, not too much, just enough to bring out the flavour - maybe 1/4 tsp. Also, I found I had to whisk the corn starch into the orange juice to avoid lumps. Definitely added to the rotation! Thanks for the inspiration!

Cinnamon Rice with Apples

Yep, yum. Based on other reviews I wanted to add a little butter, and because I had a leek in the fridge, I chopped that up, fried it in butter, then proceeded with the recipe. Will be added to the rotation; tonight it was served alongside the roast sticky rotisserie chicken from this site, the perfect dinner at a fraction the cost of a restaurant meal. Thanks!!

Mexican Fire Rice

I made this using no meat because it was a side dish to cheese and chicken enchiladas. I had already mixed together salsa and sour cream, along with a can of cheese soup for the enchiladas, so that's the mix I used for this rice; I didn't think it mattered that there was a little cheese soup mixed in and of course it was fine. Easy-peasy and excellent side dish. I ussed shredded pepper jack for the topping as that is what I had on hand. I'll definitely try it with the meat (not breakfast sausage, maybe Italian sausage I think, or pure ground pork,) as a main dish some other time; it's a great weekday meal. Thanks CHAUNIH!

Campbell's® Easy Chicken and Cheese Enchiladas

After reading the reviews, I made the following changes: Campbells Cheddar instead of chicken; a bit of salsa in the bottom of the pan; and enchilada sauce over top. I made some chicken enchiladas, but running out of chicken I made some cheese enchiladas too using hot pepper cheese. I used mild salsa for the kids and still found it rather piquant but we all loved them. Served with Mexican Fire Rice from this site. Easy and YUM! Part of our rotation this fall/winter for sure.

Pasta with Asparagus

I made a few adjustments as well - added 1T butter to the oil, sauteed the 2 veg together with the red pepper, and used about 1/2 cup pasta cooking water plus 1/2 cup beef broth (to complement my main course) and everyone just loved it! Thanks S.!
