Healing Cabbage Soup

This was good but I made changes. Used 2 qts of chicken stock instead of water and bullion. Added 1/2 tsp Italian seasoning, 1/4 tsp of cayenne pepper and left out the salt. There is plenty of salt between the stock and the stewed tomatoes.

Vietnamese Sandwich

Jr's Grilled Baked Potatoes

This was excellent. I made a few minor alterations. After putting the onion pieces between the slices I set the potato in the foil. Then I poured melted butter over the potato. I closed the foil up and baked it in the toaster oven at 375 degrees for 60 minutes. My wife and I loved it. The potato tastes quite like the potatoes in a Cornish pasty. We will be fixing these again. Thanks for the recipe.

Grilled or Fried Skirt Steak

We liked this and will probably fix again. I grilled it at 4 minutes to a side for a nice medium rare. We didn't try the blue cheese but probably will the next time.

Goat Cheese and Spinach Turkey Burgers

These were excellent! I made minor changes adding 2 1/2 tablespoons of seasoned bread crumbs, 1 egg and used fresh spinach that I wilted. The goat cheese added a nice flavor to the turkey. I fixed these on our gas bbq grill using a grill plate. We ate ours plain (no onions, condiments, etc). I tried one with Dijon mustard and liked that also. We will definitely fix these again. (our side-dish was sweet potato fries.)

Joe's Homemade Mushroom Soup

My first thought on tasting this was that it was lacking something but we enjoyed it. The next day it tasted even better. We scaled this down to 4 servings. The soup takes about a half hour or so to cook rather than the ten minutes it states on the recipe. The next time I fix this I will simmer the onions in the butter for 3 - 5 minutes until tender then add the mushrooms and simmer for another 10 and go on from there. This will be my go to recipe for mushroom soup.

Cucumber Sandwich

Couldn't find alfalfa sprouts but we didn't miss them and don't think its really necessary. My wife and I really enjoyed these and definitely will be fixing these again. This is probably the best veggie sandwich that we have ever had.

Spring Strawberry Salad with Chicken

This was a hit at our gathering. I will definitely fix this again. I used "Red Raspberry Vinaigrette" from this site and it went perfectly with this salad. We never had goat cheese before and found we like it a lot more than feta cheese and it goes well with all the other ingredients.

Red Raspberry Vinaigrette

Used this on "Spring Strawberry Salad with Chicken" and it was a hit with everyone. The only drawback is this makes a lot of dressing. Next time I will only make a 1/4 of the recipe. I used a fruit spread rather than a jam to avoid the high fructose corn syrup and a lower sugar content.
