Catherine's Spicy Chicken Soup

Reviewed: Jan. 17, 2011
I loved this soup. We topped the soup on Frito chips and cheddar cheese. I only used 4 bouillon cubes and 5 chicken breasts and I didnt add the whole canned tomatoes. I also added a can of slice olives. I dont think my changes would made that much of a difference in taste. But i loved this and I will make this again.

Whole Wheat Seed Bread

Reviewed: Feb. 28, 2011
This was great. It is nice and fluffy. It smelled too much like molasses and I was worried that it would taste like it too, but this was quite tasty. Other than the smell, I couldnt taste the molasses at all. Its pretty sweet, but not over powering. The changes I made was, I used olive oil in place of the vegetable oil and did not put in the lemon juice because I didnt have any. Im not sure what difference it would make leaving that out. I liked it anyways. I filled 4 loaf pans. I recommend cutting this recipe in half.

Cool Whipped Frosting

Reviewed: Feb. 27, 2011
This is one of the best frostings. I got two puddings and 2 cool whips in hopes of making two cakes. The first batch I made was way too runny for piping so I decided to make the second batch with only 1/2 cup milk. This was too thick for my liking. So I combined the two batches together and it was perfect. I found out very quickly that I could not frost the two cakes I panned on making. I made a two layer cake and also used the frosting for the filling. I had to go very thin on my cake so I had enough to pipe with. This worked for this cake because I used crumbled cookies for the sides and cherry pie filling for the top. So other than desired consistancy and the amount wanted, this frosting tasted fantastic. When I read other reviews I had to laugh. If you dont want your frosting to tastes like cool whip or pudding, then do not pick a recipe that only has cool whip and pudding as its ingredients. Just a suggestion :)

Homemade Vanilla Pudding

Reviewed: Feb. 24, 2011
I have have never made home made pudding before except making custards and pudding for pies...but this was AWSOME! I love how there is no egg yolks! I used skim milk to make it extra better for me. Too bad I ate the whole pot of pudding. As other reviewers have stated, I also put all the dry ingredient together then added cold milk. Its the only way I've made custards and puddings. I do think it needs to be thicker but I still loved this. I used a really good mexican vanilla and nutmeg.

Chocolate Truffle Cookies

Reviewed: Feb. 21, 2011
My family said these were the best. These were really fudgy or truffle like. In my opinion they were doughy. Im sure thats how they are suppose to be. I made most of them as written and one batch over cooked. I like my cookies chewy. I did use some white chocolate chips. Tastes great.

Buttery Yeast Spritz

Reviewed: Feb. 18, 2011
Wow these are awsome! Well, I cant say I made them exactly. All I had on hand was wheat pastry flour so I used that. I also cut the recipe in half and I tried to add 1 tsp of my mexican vanilla but I spilled and propably put in more like 1 tbls lol. I do not have a spritzer so just dropped them by spoon fulls on the baking sheet and smooshed them down. They aren't sweet and have a great butter flavor. These are quite tender and a little dry but I'm sure that is a result of the wheat pastry flour. I will be making these again, even with the wheat pastry flour.

Asparagus Roll-Ups

Reviewed: Feb. 17, 2011
I loved these. I used cheapest bread( I do not recommend it) so it crumbled on me when i tried to roll the asparagus. I would suggest using a wider loaf of bread instead of your standard Wonder bread size. It would help hold more of the asparagus. I actually doubled the asparagus and bread but used the same amount of filling called for in the recipe. I though this made lots of filling. I aslo recommend warming your cream cheese filling to make it more spreadable. These tasted awsome but nex time ill use 2 or 3 asparagus in each roll. I just love asparagus.

Thick Cut-Outs

Reviewed: Feb. 8, 2011
These tasted awsome. The texture was exactly was I wanted. They remind me of the cookies at the grocery store, which I love. All though I wish I could find a sub for egg yolks. Makes me feel guilty when I eat 20 cookies in one sitting:) I only made one change. I used splenda in place of the sugar. The dough was great and I didnt have to chill or flour my area.

Soft Garlic Breadsticks

Reviewed: Jan. 23, 2011
These were super delicious. While making the dough, I thought there was too much garlic in it...but it was perfect. I ran out of basil so i only used 1/8 tsp dried basil and 1/4 tsp oregano. I also brushed the dough with butter, baked them, and brushed with more butter and topped with more parmasan. I only had to cook mine about 15 min. in my convection oven.

Mall Pretzels

Reviewed: Jan. 17, 2011
I loved this. I have never had a pretzel from the mall to compare to, but these were good. The only change i made was, I used egg whites to brush the tops and i salted them before cooking. I only think these are good fresh. I had one the next day and they were very tough and chewy.
