Cool Whipped Frosting

Reviewed: Feb. 27, 2011
This is one of the best frostings. I got two puddings and 2 cool whips in hopes of making two cakes. The first batch I made was way too runny for piping so I decided to make the second batch with only 1/2 cup milk. This was too thick for my liking. So I combined the two batches together and it was perfect. I found out very quickly that I could not frost the two cakes I panned on making. I made a two layer cake and also used the frosting for the filling. I had to go very thin on my cake so I had enough to pipe with. This worked for this cake because I used crumbled cookies for the sides and cherry pie filling for the top. So other than desired consistancy and the amount wanted, this frosting tasted fantastic. When I read other reviews I had to laugh. If you dont want your frosting to tastes like cool whip or pudding, then do not pick a recipe that only has cool whip and pudding as its ingredients. Just a suggestion :)

Chocolate Popcorn

Reviewed: Apr. 15, 2009
This is pretty good. I will definitly make it again. I just used 2 bags of microwave popcorn and that worked perfect. Next time id like to use brown sugar, maybe a tiny bit of salt and possibly baking soda. I have a great recipe for caramel popcorn and i think adding the cocoa powder might be nice. I used dark cocoa powder which made this look like tar lol. This will be fun for holloween. I suggest using a sheet pan line with parchment paper instead of 9x13 cake pan. This helps with the unwanted extra oil and also helps dry out popcorn and crisp up more evenly.

Kielbasa Appetizer

Reviewed: Apr. 30, 2011
Im not sure what kind of mustard Mary Jo intended for this recipe but I used up the rest of my dijon mustard and had to use a little bit of yellow mustard to get my 1/2 cup. It turned out wonderful. Quite spicy for the kids but they still ate it. It turned out kind of runny so I cooked it down some to make it thicker and we topped this on brown rice. It tasted great. Thanks for the post.

Cranberry and Cilantro Quinoa Salad

Reviewed: May 18, 2011
This was a great salad. I cooked my quinoa with a chicken bullion cube and didnt add the salt and pepper. This salad is so beautiful and colorful There is so much flavor going on in this dish my husband ate most of the batch. The only thing I would do differently is cut my onion supper thin and put less in it. My onion was strong and spicy.

Granola Energy Bars

Reviewed: Jan. 26, 2011
It was a little too sweet for my taste. The second time I cut back on the honey and added and egg white to help replace the moister and hold it together. I also suggest using flax seed meal or just grind up the flax seed or you will not digest the nutrients from the flax seed.

Mojo de Ajo

Reviewed: Jun. 23, 2011
First of all, I did not follow recipe exactly. So I am rating this on my changes. I did not add chipotle chili peppers because Ive seen this recipe before and it didnt have them in the recipe and I wanted something I could use for anything. Kids dont like spicy. I used 2 cups of olive oil becauce I like to use the oil for pan frying. Used 1/2 cup lime juice and 1 tsp of salt. Dont waste your time chopping garlic, just keep them whole and put them in your baking dish with the salt and oil. Cook this in the oven at 325* for about an hour then added lime juice, put it back in the oven for another 25 mins or until golden brown. Slow cooking this is the key. I used potato masher to mash the garlic up. Possibilities are endless with this one. Use your imagination. I made plain spagetti noodle pasta and added this to it with some parmasan and extra salt. Sooo good. You can also make this with popcorn. I also heard this lasts forever as long as the garlic is covered in oil and its kept in the fridge, but I cant testify to that because we eat it too fast to know.

Coconut Cream Pops

Reviewed: May 11, 2011
These were good. They are not very sweet. You can taste the canned milk flavor and I do think maybe it needed more coconut flavor. Im going to try to make these with pineapple juice for pina colada flavor. I dont suggest to put in cinnamon. You cant really taste it and it settles to the bottom of your pops. We enjoyed these.

Nutella® Cheesecake

Reviewed: Aug. 4, 2009
I gave this 3 stars cause it was way too sweet. All that sugar overpowers the cheese and nutella. But I'll give this a 5 star the way I made it the second time. I used 2 blocks of cream cheese, 2 eggs, 1 tsp of vanilla, and 1 jar of nutella.(dont not add extra sugar) I baked this at 350 for 30-45mins. in a 8 inch spring form pan. For the crust i used chocolate cookie crumbles(eyeballed it), 1 egg white, and 2 tablespoons butter and baked the crust at 350 for 8 mins. Let the cake chill for atleast a full day or more. The longer it sits the better it gets. This worked out very well and everyone loved it. I think it could used more hazelnut flavor. I'd suggest maybe adding chopped toasted hazelnuts. Anyways, if you want a real cheesecake then turn this into a baked cheese cake.

Remiscitti

Reviewed: May 18, 2011
I really enjoyed this. Reminds me of my moms goulash except it has bacon in it. The only change I made was, I used tomato sauce instead of juice and mixed the tomato sauce in with the ingredients and topped mine with parmesan and motzorella cheese. This was yummy.

Cheesy Butternut Squash Pasta Sauce

Reviewed: Apr. 19, 2011
This was great. Sweet and savory. I only had parmasan on hand so I used that and also had to add more liquid to get it thinned out for my noodles. Next time I'd like to puree it. Tastes great.

Coconut Rice with Black Beans

Reviewed: Mar. 13, 2011
My 5 star is based off my version of this recipe. I do not have a good pot for cooking rice so I microwaved mine. I used brown rice instead of jasmine and used the directions for the brown rice to liquid ratio for microwaves. I used 1 cup rice, 2 cups light coconut milk(didnt want to waste a half can of coconut milk so i used the entire can), 1 cup water, 1/4 tsp salt, and 1 tsp brown sugar. All other ingredients were exact. Cooked mine for 10 mins full power, then 20 mins 50% power in an uncovered 2 quart baking dish. I thought it turned out great. I was looking for Rumbi rice from the Rumbi resturant chain and this came out really close. I would say the salt and sugar is needed for this recipe but it just depends on how you like your rice.

Out of this World Turkey Brine

Reviewed: Jan. 30, 2011
My husband thought this was great. I did not. I left it in the brine for 2 days like it was recommended, but it turned out too salty for my taste. The flavor was great, so next time ill leave it in for less time.

Marshmallow Treats

Reviewed: May 19, 2011
I added vanilla and pink die. Thank you "makeiteasy4me". I have always made hard as rock crispy treats but with your tips this was awsome. Cook everything on low low low and just be patient for the ingredients to melt.

Oatmeal Pancakes

Reviewed: May 17, 2011
First, I will rate the pancakes. They tasted fine and I love that they have no all purpose flour. They were a little too flat for my liking, and tastes a little bland. But with butter milk syrup you really don't need worry about the pancakes being bland. Second, the syrup. This did not turn out at all. I made it the first time and I thought I miscalculated the ingredients, so I made this a second time. I was very careful to follow ingredients and instructions exactly. Worst syrup ever. I have made this kind of syrup before but that recipe tells you to add the buttermilk WITH the sugar, butter and corn syrup then boil until golden brown. This recipe just tells you to stir in the buttermilk after it cooks. Mine ended up turning into a hard rock stage when I added the buttermilk. At this point there was no combining of the two ingredients. So since the syrup is part of this recipe, then I have to give this a 2 star. Pancakes were still good tho. Look up German pancakes with buttermilk sauce recipe from this sight. That is the syrup I ended up making.

Baby Blintz Stacks

Reviewed: May 4, 2011
Wow, these are so flavorful! Nutmeg is quite strong but makes these so good. It is not peach season but when I saved this recipe, I just couldnt wait to make them. So I used canned peaches instead and drained them. Make sure to put the nutmeg in the cottage cheese mixture because the description does not instruct you to do so. I almost missed it...it makes a huge difference in flavor. I got a little lazy with the stacking and just started eating them like regular pancakes lol. Very good, thanks for the post. By the way, this makes tons of filling.

Basic Buttermilk Corn Bread

Reviewed: Mar. 13, 2011
I liked this but its bland. I'm not used to cornbread with out the sweet but I did enjoy it. I have been experimenting with pinole, and cant find anything good. I know this is not pinole but it tastes the same to me but easier to swallow. This would go great with chili or to compliment some dish. I love that there is no flour in this recipe. If you like it sweet then it seems easy enough to just add some sweetener to this recipe.

Whole Wheat Seed Bread

Reviewed: Feb. 28, 2011
This was great. It is nice and fluffy. It smelled too much like molasses and I was worried that it would taste like it too, but this was quite tasty. Other than the smell, I couldnt taste the molasses at all. Its pretty sweet, but not over powering. The changes I made was, I used olive oil in place of the vegetable oil and did not put in the lemon juice because I didnt have any. Im not sure what difference it would make leaving that out. I liked it anyways. I filled 4 loaf pans. I recommend cutting this recipe in half.

Tortellini Salad

Reviewed: Jul. 5, 2011
I personally thought this was just ok, but my guests thought this was incredible. I invited about 30 people over and almost all of them complemented me on this salad. So I am giving this a 5 star. I added more ingredients to make more salad. I included asparagus(Cooked in boiling water for 1 min the in icebath) fresh cut cherry tomatoes, parmasan cheese and a green pepper. Used the same amount of dressing and it worked fine. I do not think you need to add more dressing unless you plan on eating this the next day when the noodles soak up the sauce. I suggest other reviewers to wait to add the sauce until right before you serve it. This was good but I also think it depends on what kind of tortellini you buy. Some are better than others...Thanks for the recipe.

Buffalo Chicken and Ranch Wraps

Reviewed: May 2, 2011
These are the best wraps ever! Anyone who loves buffalo sauce has to try this. I kept the recipe basically the same. I added avocado, fresh cilantro, and used corn tortillas instead of flour(they taste so much better). I also changed the ranch dressing to Blue Cheese dressing. Buffalo wings just are not the same with out blue cheese dressing. Best ever! Ill be making these again soon. Thanks for the post.

Good-Morning Banana Nut Cereal

Reviewed: Apr. 14, 2011
This beats any hot cereal I have ever had. We made this for dinner tonight and my 4 year old loved it. I doubled this recipe and made some small changes. I used ground flax seed instead of oat bran and sunflowers instead of walnuts. I also added about 2 tsp of chia seeds for extra protein. My bananas were a little ripe with black spots but I think it added extra flavor. The quinoa doesnt cook all the way but you dont even notice with the crunchy nuts in the cereal. Very good. Awsome and Thanks for the post.
