Remiscitti

Reviewed: May 18, 2011
I really enjoyed this. Reminds me of my moms goulash except it has bacon in it. The only change I made was, I used tomato sauce instead of juice and mixed the tomato sauce in with the ingredients and topped mine with parmesan and motzorella cheese. This was yummy.

Cranberry and Cilantro Quinoa Salad

Reviewed: May 18, 2011
This was a great salad. I cooked my quinoa with a chicken bullion cube and didnt add the salt and pepper. This salad is so beautiful and colorful There is so much flavor going on in this dish my husband ate most of the batch. The only thing I would do differently is cut my onion supper thin and put less in it. My onion was strong and spicy.

Oatmeal Pancakes

Reviewed: May 17, 2011
First, I will rate the pancakes. They tasted fine and I love that they have no all purpose flour. They were a little too flat for my liking, and tastes a little bland. But with butter milk syrup you really don't need worry about the pancakes being bland. Second, the syrup. This did not turn out at all. I made it the first time and I thought I miscalculated the ingredients, so I made this a second time. I was very careful to follow ingredients and instructions exactly. Worst syrup ever. I have made this kind of syrup before but that recipe tells you to add the buttermilk WITH the sugar, butter and corn syrup then boil until golden brown. This recipe just tells you to stir in the buttermilk after it cooks. Mine ended up turning into a hard rock stage when I added the buttermilk. At this point there was no combining of the two ingredients. So since the syrup is part of this recipe, then I have to give this a 2 star. Pancakes were still good tho. Look up German pancakes with buttermilk sauce recipe from this sight. That is the syrup I ended up making.

Cream of Cauliflower Soup II

Reviewed: May 14, 2011
This was very yummy untill I put the nutmeg in. It was too strong for me. Very good other wise. I will just have to scale back the nutmeg a bit for my tasting. I love the uses of cauliflower. My favorite is alfredo sauce, use blended cauliflower instead of dairy products. I did not add the milk cause I thought it would be just as creamy with out it.

Crispy and Creamy Doughnuts

Reviewed: May 14, 2011
These were good. Not much like the real thing. They were difficult to transfer to the hot oil and my frosting would not stick to my donuts. So we just dusted with lots of powdered sugar. These were awsome right out of the oil, but once they cooled they were not very good. We popped these in the microwave for 10 seconds and they were better. I also halved this recipe to make 9 but they made more like 2 dozen large donuts.

Grilled Corn in Husks

Reviewed: May 12, 2011
Best corn ever! It was perfect. Mine caught on fire and I even soaked them for 2 hrs. Still turned out great. I just grilled it with butter. Im not sure why everyone thinks this is work. These were not hard at all. Just peel clean and butter it. Wrap back up and cook. Great! I think next time I will try to just throw them on the grill with out peeling them like one reviewer suggested. We will see how those turn out.

Coconut Cream Pops

Reviewed: May 11, 2011
These were good. They are not very sweet. You can taste the canned milk flavor and I do think maybe it needed more coconut flavor. Im going to try to make these with pineapple juice for pina colada flavor. I dont suggest to put in cinnamon. You cant really taste it and it settles to the bottom of your pops. We enjoyed these.

Zucchini Brownies

Reviewed: May 6, 2011
It was edible. The tastes was fine but mine turned out really grainy and dry. It looks nothing like the pictures. I got myself a new food processor and used that to grate the zucchini. It turned out a little thicker than I had wished but that may be the reason why it didnt turn out. I will try again and used a smaller grater to shred the zucchini. After reading the reviews I am kind of wondering if the way people are grating there zucchini is changing their results so much. I guess I will find out next time I make this. Update: I grated the zucchini very fine this time and it turned out much more moist. More like a dense cake. In fact i would not call this a brownie. It was too much like cake but very good. Lesson learned: dont grate zucchini too thick.

Avocado Dessert

Reviewed: May 4, 2011
Im a huge avocado fan but I am not sure I like it all that much. I tasted it and didnt like it. Then I added some mint leafs and that helped. My 4 year old asked for seconds and my 9 month old cried when it was all gone lol. I just couldnt get my self to finish my serving so I fed it to my baby. I loved the idea tho. I will make this again and add something else to calm the avocado down. Maybe a banana or something. Family loved it but I didnt so it deserves 4 stars.

Baby Blintz Stacks

Reviewed: May 4, 2011
Wow, these are so flavorful! Nutmeg is quite strong but makes these so good. It is not peach season but when I saved this recipe, I just couldnt wait to make them. So I used canned peaches instead and drained them. Make sure to put the nutmeg in the cottage cheese mixture because the description does not instruct you to do so. I almost missed it...it makes a huge difference in flavor. I got a little lazy with the stacking and just started eating them like regular pancakes lol. Very good, thanks for the post. By the way, this makes tons of filling.

Black Bean Brownies

Reviewed: May 3, 2011
These were really good. There is something different about the texture tho. Kind of grainy and soft. Not sure how to explain it but these tasted great. I ate two pieces right out of the oven. Cant taste beans at all. These are wonderful with ice cream. Super easy.

Buffalo Chicken and Ranch Wraps

Reviewed: May 2, 2011
These are the best wraps ever! Anyone who loves buffalo sauce has to try this. I kept the recipe basically the same. I added avocado, fresh cilantro, and used corn tortillas instead of flour(they taste so much better). I also changed the ranch dressing to Blue Cheese dressing. Buffalo wings just are not the same with out blue cheese dressing. Best ever! Ill be making these again soon. Thanks for the post.

We put this in a sourdough rye bread bowl hollowed out and used the inner bread for dipping. It is awsome. Tastes great with veggies too. Don't change a thing.

Kielbasa Appetizer

Reviewed: Apr. 30, 2011
Im not sure what kind of mustard Mary Jo intended for this recipe but I used up the rest of my dijon mustard and had to use a little bit of yellow mustard to get my 1/2 cup. It turned out wonderful. Quite spicy for the kids but they still ate it. It turned out kind of runny so I cooked it down some to make it thicker and we topped this on brown rice. It tasted great. Thanks for the post.

Peach Cobbler V

Reviewed: Apr. 30, 2011
My family has been making this for generations. The change that we make is that we used home canned peaches and drain most of the liquid out. Another change we make is, we have 2 tsp of baking powder to make it a bit cake like. 2 tsp of baking powder will make it cover all the peaches. It is great both ways. Some reviewers say it was a bit gooey but the way we make it, it is suppose to be that way. Its ok because there is no eggs in this recipe. We also like to add vanilla and sometimes cinnamon and nutmeg. But I guess with the pie filling you already get those spices. Great recipe.
