Manicotti Italian Casserole

Pretty good. I cut it in half and only used mild italian sausage. Also used fresh mushrooms and sauted them in garlic and oil with an onion. Mixed all the ingredients together including cheese then topped it with more cheese and parmasan. My kid loved it.

Tortellini Salad

I personally thought this was just ok, but my guests thought this was incredible. I invited about 30 people over and almost all of them complemented me on this salad. So I am giving this a 5 star. I added more ingredients to make more salad. I included asparagus(Cooked in boiling water for 1 min the in icebath) fresh cut cherry tomatoes, parmasan cheese and a green pepper. Used the same amount of dressing and it worked fine. I do not think you need to add more dressing unless you plan on eating this the next day when the noodles soak up the sauce. I suggest other reviewers to wait to add the sauce until right before you serve it. This was good but I also think it depends on what kind of tortellini you buy. Some are better than others...Thanks for the recipe.

Good Old Fashioned Pancakes

I thought these were too salty, but good otherwise. I also added 1/2 wheat and 1/2 white flour. I will cut the salt in half next time.

Jerky Lover's Jerky - Sweet, Hot and Spicy!

Perfect. Only next time I will cut my meat thicker. My thicker pieces were a bit more tender than the thin pieces. I also marinaded my meat for 24 hours before drying and it took about 16 hrs to dry. My dryer doesnt have those fancy blower elements in it, so it takes longer for my food to dry.

First of all, I did not follow recipe exactly. So I am rating this on my changes. I did not add chipotle chili peppers because Ive seen this recipe before and it didnt have them in the recipe and I wanted something I could use for anything. Kids dont like spicy. I used 2 cups of olive oil becauce I like to use the oil for pan frying. Used 1/2 cup lime juice and 1 tsp of salt. Dont waste your time chopping garlic, just keep them whole and put them in your baking dish with the salt and oil. Cook this in the oven at 325* for about an hour then added lime juice, put it back in the oven for another 25 mins or until golden brown. Slow cooking this is the key. I used potato masher to mash the garlic up. Possibilities are endless with this one. Use your imagination. I made plain spagetti noodle pasta and added this to it with some parmasan and extra salt. Sooo good. You can also make this with popcorn. I also heard this lasts forever as long as the garlic is covered in oil and its kept in the fridge, but I cant testify to that because we eat it too fast to know.

Cheese Garlic Biscuits II

Golden Sweet Cornbread

My Own Famous Stuffed Grape Leaves

Im not sure about this one. Didnt taste like the greek place we love but these were still ok. I used brown rice since that is all we buy, so maybe that makes the difference. This made tons of filling. I bought one jar of leaves($4.99) and made these pretty big. I still had too much filling. Im not sure these were worth the money i spent in leaves. I will have to learn how to can my own grape leaves.

Cranberry Nut Granola Bars

Pretty good. I used homemade sweetened condensed milk from this site. Also used chocolate chips, soy nuts, sunflower seeds, and raisens.(its all I had) Also added ground flax seed and wheat germ. I liked it. Mainly only used this recipe as a base. Never tried condensed milk before in granola bars. Turned out quite nice. Next time Ill used just regular rolled oats. I'm not a fan of the quick cooking oats. Good recipe.

Sweetened Condensed Milk

Its a nice substitute. Cant say its any cheaper but good if you dont want to run to the store for canned milk. I added vanilla to mask the powder milk taste and used it in granola bars from this site. Worked fine. Mine was pretty thick so I added a tiny bit more boiling water.

High Protein Peanut Butter Balls

Good. Mine got oily but still good. They are hard to bite into so next time I'll make them bite size. I just used a small cookie scoop since this was quite sticky for hand rolling. I made 32 balls. Also added mini chocolate chips to mine and ground flax seed. You cant digest the seeds whole.

Heather's Cilantro, Black Bean, and Corn Salsa

We ate this up. Pretty good. Not much of a fan of an Italian corn salsa. I probably will not make this again. I would have to change the tomatoes to plain tomatoes and add some kind of mexican spice to it, like cumin or something.

Rocky Road Squares

I'm not sure if this should get a 4 star. I love magic bars so i thought the addition of marshmallows would be awesome. And it was pretty good but the marshmallows kind of dissolve into the mixture. So you cant taste or see them. If I make them again I will bake normal magic bars then add the marshmallows after the cooking and just brown the marshmallows on top. I think they would look better that way too. Although cutting the bars would probably be difficult.

Chili-Cheese Spoon Bread

Pretty good. I had to make my own creamed corn because I dont buy canned corn(tastes like metal to me). I just put corn in my blender and add milk sugar and salt. I used frozen corn. I also dont use egg substitute so I put in 3 eggs total. 1/4 cup of egg substitute = 1 egg. This reminded me of a cross between cornbread and an omelet. I'd love to use this as a base recipe and maybe add black beans and chili spices. But this recipe was great on its own.

Cheesy Zucchini Casserole I

We loved this. Made this with left over french bread. I just eyeballed the recipe and realized I added too much bread so I added another egg. My husband couldnt get enough of this. I covered this with foil shaped like a tent over the casserole, then took the foil off half way through. I do not recommend this. The cheese and bread get a little hard and chewy. Next time I will just keep it covered.

Marshmallow Popcorn Balls

Good. I looked in my pantry and decided I didnt just want popcorn, so I added 2 T more butter and 2 cups more marshmallow with 1t of mexican vanilla, then added about 2 cups of rice cereal and a handful of shredded coconut. Also mixed in sprinkles. Turned out wonderful.
