Salmon Cakes II

Reviewed: Sep. 9, 2001
This recipe is fantastic. Even my husband, who isn't all that fond of salmon, loved them and when looking for more. They're super easy and they reheat wonderfully. The only thing I changed was that I rolled them in cornmeal for a little extra crunchiness. Thanx Jeanie Bean.

Best Brownies

Reviewed: Oct. 18, 2001
These really are the easiest and best tasting brownies ever. I also left the icing off as the brownie is fantastic all by itself. These are virtually "no mess and no time". Thank-you, thank-you, thank-you!!!

Aussie Chicken

Reviewed: Oct. 23, 2001
This recipe was a little time consuming but well worth the effort. I was able to do everything but the baking in advance so it was a very convient dish to prepare for company. The sauce and the overall flavor was fantastic. I tripled the amount of chicken breasts, mushrooms and bacon, but not the sauce (there was plenty). It was a hit with all. Also, the leftovers reheated very nicely.

Farm Macaroons

Reviewed: Oct. 31, 2001
This recipe was very easy and unlike some of the other reviewer, I did not have any difficulty getting my egg white stiff (room temp egg whites work best). Everyone seemed to love the flavor of this recipe, but it was way to sweet for my liking.

Amazing Ribs

Reviewed: Mar. 1, 2003
These ribs were fantastic. My husband never cared for my oven ribs because they always seemed fatty. The boiling takes away the fat and doesn't add alot of work. I also skipped the grilling part for ease, and put them in the oven as others have suggested (325 for 3 hours). They were browned and tender and simply the best ribs I think I've ever had. Thanks

Asparagus, Chicken and Penne Pasta

Reviewed: Mar. 1, 2003
This recipe is really good. Although I'm sure it didn't need it, I added a few more things just because I was feeling adventurous. I added some slices of red bell pepper, whole mushrooms, and some jumbo prawns. My husband and I loved it.

Fabulous French Loaves

Reviewed: Dec. 28, 2003
I LOVE this recipe. I have made it repeatedly. Thank-you thank-you!!! I don't use the egg wash or the sesame seeds on top; it doesn't really need them. This recipe is also very easy for beginner bread makers.

Health Nut Blueberry Muffins

This recipe is indeed fantastic. I substituted the sugar with 1/2 cup sugar twin, used all whole wheat flour and they were excellent. My husband keeps raving about how good this guilt free muffins are.

Broccoli Chicken Delight

Reviewed: Dec. 10, 2006
I have been making this recipe for a while now. My family loves it and yes, it is a great pot luck dish. I use uncooked chicken breasts (cubed) though, still cooked for an hour, and I mix all the sauce ingredients together with the cheese, until the cheese is melted, then pour it over the chicken and broccoli. I also omit the cracker topping. I have tried to make this dish with fresh, cooked broccoli, and it is better tasting with the frozen as suggested in the recipe.

Roasted Beets and Sauteed Beet Greens

Reviewed: Jun. 3, 2010
I roast my beets all the time, but if you wash them really well before you bake them, you can eat the skins. They are so yummy.

Spicy Chicken and Sweet Potato Stew

Reviewed: Feb. 1, 2012
The recipe is SO good. I like to try a new recipe as close to the original as possible to test it first before making changes. I only made two small changes...I used chicken stock instead of water, and I added mushrooms, only because they were in the fridge and needed to be used before they went bad. Both my husband and I loved this dish. Will make it again, and again. Thank you.

Baked Pork Spring Rolls

Reviewed: Jun. 11, 2012
These were really easy and so good. I used Hoisin sauce instead of Oyster sauce and they were fantastic. My husband thought they were better than the traditional fried in a pan kind. This is a keeper. Thank you!

Cranberry Pistachio Biscotti

Reviewed: Nov. 17, 2012
I can't say enough good about these biscotti. Yes, I made a few alterations, but only because I didn't have everything on hand. I used regular EVOO, and it worked just fine. I didn't have almond extract or almonds, so I used lemon extract and toasted pumpkin seeds. Also, I was feeling "spicy" so I added 1 tsp each of ground cardamon, and cinnamon, and 1/8 tsp cloves. They were so great!!! I can't wait to buy the original ingredients and try it again. I believe that with this recipe, you could add any flavouring you want and have them turn out perfectly. WET YOUR HANDS while working with the very sticky dough (I had my doubts about because they were so sticky), but the cookies were as I already stated, perfect. Thank-you!!
