Beer Spice Cake

This recipe made 17 yummy, spicy, moist cupcakes! (18 min at 375) The only change I made was the brown sugar. I was out, so I added 1 cup sugar and 1 Tbl molasses. They turned out great! I, too, topped these with a simple cream cheese frosting. My husband loved his "Beer Cupcakes" for his birthday!

Portobello Mushroom Burgers

We loved these! Easy and very satisfying even to my carnivore husband! But, I will say, don't waste these delicious mushrooms on ordinary, store bought, boring buns. They just DO NOT do the 'shrooms justice! Splurge on good crusty rolls or whatever you prefer! Update: (6-13-12) Made these again but decreased the balsamic by 1Tbl and added 1Tbl of toasted sesame oil. (Seven year old didn't like the sour last time!) The sesame oil added yummy flavor and toned down the vinegar. Whole family liked these better!

Maria's Pepper Steak

This is an awesome recipe! The only change I made was to cut down on the honey by about 1/3 because I was afraid it would be too sweet. It had a great tangy flavor! My four year old had three helpings!!! I think this sauce would also be great for the "tofu and green beans" dish my sister and I always got at the Chinese take-out place in the Pittsburgh Airport. Easy and delicious! Thanks!!

Stuffed Shells I

These are easy and delicious! I made them for my father-in-law and he said this is now his favorite dinner I have ever made for him! The only thing I did differently was to use fresh parsley as I had some on hand. I also divided this into two smaller pans and froze one. A month later it was still delicious! The frozen pan I baked covered at 350 for about 45+min (until warmed through) then an additional 10 minutes uncovered. You'd never have guessed they had been frozen!

Easy OREO Truffles

These are really good and very easy! (And a great use for Oreos that might have gotten a little not so crispy!) I dipped half in chocolate and rolled the other half in crushed pretzels. They were both good but the pretzels got soft after storing...they were great immediately after making though!

Asian Lettuce Wraps

These were delicious! I used chicken instead of beef and also added diced straw mushrooms, shoestring carrots and chopped almonds. Yum! I will definitely make these again especially since my 6 year old had 4 servings!!!

Chicken Enchiladas I

These were awesome! I too made a couple of changes. I substituted 1 cup of mild enchilada sauce and a can of diced green chilies for the tomato soup, water, chili powder and green pepper. Also, I poured more enchilada sauce over the top instead of taco sauce. I also put a layer of warmed refried BLACK BEANS (did you know they make those? yum! look in the Hispanic grocery section, not the taco section.) on the tortilla, then added the chicken mixture before rolling them up. The whole family loved them!

Baked French Fries I

I, too, changed the temp to 400 and reduced the time to 30 minutes. I cut my fries to between 1/8in and 1/4in and they were perfect!

Swanson® Braised Beef with Shallots and Mushrooms

My husband & I made this for dinner last night and it was very good! However, next time we make it, we will cut down on the amount of lemon rind. We found it too overpowering for us. But, if you like a lot of lemon flavor (which seemed to us a strange combination with beef, but decided to try it anyway) then by all means, use the 2Tbl it calls for. Husband said he would also cut down on the parsley, but he's not a huge parsley fan. I loved the parsley! Will make this again!
