Penne with Ham, Mushrooms and Peas

I used fresh grated white cheddar cheese but that was the only ingredient that I changed. It was very good but quite time consuming. Hubby wants me to put crunched up Frito's on top next time. I put it all together in the large pot for mixing but then I placed it in a casserole dish, put extra cheese and the parsley on top and baked it for twenty minutes at 350 degrees. It made a nice presentation for the table. I served it with fresh crusty bread and a green salad with homemade lemon dressing.

Vegan Carrot Curry Soup

We loved this creamy carrot soup. The only thing I changed was I used chicken broth rather than vegetable broth. We think the coconut milk was the perfect touch. Next time I will double the recipe and serve it to guests. Thanks Monsterclowngirl...great job!

Shrimp and Crab Macaroni Salad

Wow, this not only looked pretty but tasted wonderful! I did change it just slightly. I changed the serving size to 4 rather than 6...there's just two of us. I omitted the eggs and used a red onion. I always buy celery with bright green tops as I use the celery leafs along with the diced celery. I put in a small jar of pimentos (for color) and used fresh lump crab meat along with the shrimp. For the dressing I omitted the milk and used sour cream instead. I doubled the dill weed and used Sriracha hot chili sauce rather than hot pepper sauce. The fresh mint from our garden was a nice touch also. I let it blend in flavor for 5 hours and then plated it on a bed of fresh butter lettuce. Not only did it look great, it tasted like a top quality crab and shrimp salad. Thanks Fred.

Crab Salad III

Very tasty crab salad. I omitted the olives, radishes and quartered the tomato to place alongside the salad. I plated it on a bed of butter lettuce with the tomato and a quartered boiled egg. I sprinkled extra fresh dill on top. I'm sure I'll make this again. Thanks Joycie for a great recipe.

Stuffed Shells I

I followed Sallyjun's recipe to the letter but when I went to stuff the shells using others suggestions of putting mixture in a plastic bag and cutting off a tip to allow mixture to be squeezed out, it was a horrible mess. So, here's what I did. I used my smallest spring loaded scoop, about the size of a golf ball, and filled the scoop to the top and then released the filling into a shell....worked fantastic and there was very little mess. Sometimes these small scoops are hard to find but they are worth their weight in gold. I use it for making cookies. Now back to the recipe. I baked the pasta shells for 20 minutes covering it with non-stick aluminum foil and then removed the foil and baked for another 20 minutes. Turned out perfect. I used Prego which is our favorite red sauce. Hope I've made someone's day with the small spring loaded scoup suggestion. Meanwhile, thanks Sallyjun.....great recipe!

Spinach Tomato Tortellini

Teena's Spicy Pesto Chicken and Pasta

I saved this recipe and finally made it last night. I followed the directions completely and we both loved it. Next time I might add some fresh mushrooms or sun dried tomatoes...maybe not as it's easy and oh so good!

Italian Sausage Tortellini Soup

We both loved this great soup. It has so much flavor and is so good for you. I had sweet Italian sausage so I added about 1/2 teaspoon red pepper flakes. That was the only change I made. Thanks for sharing this great recipe as it will be a monthly soup from now on.

Best Tuna Melt (New Jersey Diner Style)

Very good tuna melt, one of my husband's favorites. The only thing I changed was the sliced tomatoes to grape tomatoes cut in half. This is the second time I've made this recipe. I had forgot how good it was and we were in the mood for tuna melts. We always use Costco's albacore tuna packed in water. We think it's the best.

Marie's Easy Slow Cooker Pot Roast

Nice recipe. Rather than use all water, I used half water and half sherry. What a great flavor. I thickened the juices with Wondra Flour which made an excellent gravey. A sprinkle of fresh chopped parsley completed the presentation.

Tender Breaded Turkey Cutlets

Not Red Spaghetti Sauce

Great recipe! I didn't use beef bouillon, instead I used 1/2 cup beef stock. Used half of the recommended butter and before serving I grated fresh Parmesan cheese on top. This is a keeper.

Italian Salad Dressing

I really don't like store bought dressings so I'm always searching for a healthy tasty new one. THIS IS THE BEST!! The first time I made it I had everything ready to go but didn't have the envelope of Good Season's Dessing Mix. Instead I used three tablespoons of McCormick's Salad Supreme. It was to die for. The original recipe is just as good. I found you need to let the dressing set for a few hours for the best blended taste. Great recipe!
