Baked Flan

This was quick and easy. Beware, unless your blender is industrial size, this could be too much for it. The only problem I had is that my family members couldn't wait for it to cool and wanted to eat it all as soon as it came out of the oven. That's a good problem!

Fluffy and Delicious Pancakes

I have made this without the cinnamon and vanilla numerous times and the pancakes are wonderful! The pancakes are fluffy, moist, and have a wonderful texture. I have a few warnings to those who are unfamiliar with this recipe: 1. do NOT add the vanilla. In my experience this negates the effect of souring the milk and the pancakes end up flat. 2. DO mix dry ingredients and wet ingredients separately and then just barely combine immediately before cooking. This is not the batter to make in advance or let sit a while. 3. Do not over mix. Any mixing beyond combining takes fluffiness away from the pancakes. 4. Cook them low and slow. These will burn before cooking through if you don't use low, even heat to cook them. a cast-iron skillet works great. 5. Make a big batch once you have confidence. These will be popular. My family of three adult eaters and two children quadruples the recipe and ends up with just a couple single-serving leftovers for the freezer. But then, we really like pancakes. Enjoy!

Danish Oven Pancake (Aeggekage)

Decrease the temperature! This is a great recipe--when baked at 425. At 500, this just browns or blackens before cooking in the middle. I love these, but if I rated this recipe based on the product I got without decreasing the temperature, I would give it two stars. If you plan to follow the recipe exactly, take my advice and start watching for burning long before you are supposed to take it out of the oven.

Fluffy Pancakes

I have made numerous pancake recipes, and these are the best--even better than buttermilk pancakes. You won't regret trying this recipe if you like fluffy, moist pancakes. Be sure to follow the recipe. If you add vanilla or alcohol-based flavoring, it will negate the vinegar's souring of the milk, giving flat pancakes instead of fluffy perfection.

I had always used a melted butter recipe before this, but this one seemed to have better consistency than my other recipe. Try eating these with a cream cheese, vanilla, powdered sugar spread and fresh bananas, strawberries, and whipped cream. Yum!

Blueberry Streusel Muffins

I made a quadruple batch of these intending to give some to friends. It's a good thing that I didn't just double it because within 10 minutes of the first batch coming out of the oven my son had eaten four of them and would have gone for more if I hadn't cut him off. I had to exercise restraint to only have three myself. Be advised, the difference between doughy and perfectly done is a matter of one or two minutes. Check frequently once they get close. With my oven in convection mode, it only took 18 minutes to bake these.
