I was surprised how good and yummy these were! Of course, I made adjustments according to what i had in my kitchen. I was out of coconut and didn't have apricots. I used 1/2 the amount of oil, I used olive oil, and added 2 single serving cups of applesauce in substitute. I also added an entire cup of chocolate chips since my sons were expecting chocolate chip muffins. Even with my subs. I felt I was giving them a healthy alternative to their regular choc. chip muffins. They didn't even flinch at the sight of the shredded carrots and I thought they gave the muffins color and character. We had them again this morning, left over from yesterday, and they were just as good. Color me surprised and in LOVE with this recipe!!!
