Beets and Greens

My family really liked this recipe! I am part of a co-op and received beets this week. I've never made them before and was very very pleased with the results! I added cabbage, carrots, and scallions because I had them in the fridge. I do not think I would put the cabbage in again as I found it make the recipe a bit bitter. However, the carrots and shallots were AMAZING in the recipe! Aesthetically, it is a beautiful dish. It will definitely be added to our normal go-to dishes!

Individual Baked Eggs

Mushroom Meatloaf

This was a fantastic recipe. I was hesitant as it looked too easy! I made 3 minor changes - I didn't leave any mushrooms un-minced as my son hates mushrooms and I wanted to hide them ;) and I added 3 leaves of fresh minced basil (mine grows like crazy so I add it to just about everything). My son loved it so much he had seconds! Also, I used Adoba seasoning instead of salt. Next time, I will try sauteing the onions and mushrooms first.

Sweet Potato Cranberry Bake

This is one of my favorite holiday recipes! Usually I need the oven space so I make it in a crock pot. I do not pre-cook the potatos. I peel and slice the sweet potatos raw. Then I layer potatos, cranberries, nuts, brown sugar, over and over until I fill the crock pot. I do not make the topping separately. I just add slices of butter and cinnamon to the top of the last layer, then add the OJ. If you like yours very sweet, you can add honey or extra brown sugar. Sometimes, I will do all of this the night before and let it sit in the fridge overnight if I will be rushed for time the day of the dinner. Cook for 3.5-4 hours on HIGH or 6-8 hours on LOW. LOVE how easy this recipe is!

Moroccan Meat Cigars

I love this recipe as it but to mix it up I occasionally use organic ground lamb and I add some chili powder to add a little bit of a kick to it! These are perfect for pot-lucks, as appetizers, or finger foods for Sunday football!

Thai Pumpkin Soup

This soup was a hit for the entire family. I made some slight modifications based on what I had in my house and personal preferences. I doubled the amount of garlic and lemon grass that the recipe called for and used canned pumpkin instead of fresh (1 can = 2 cups). I also added about a 1 teaspoon of ground ginger and a 1/2 teaspoon of yellow curry powder. Instead of red chili peppers I used green serrano peppers. I also added some coconut syrup (about a teaspoon) to sweeten the spiciness of the soup. This was an amazing recipe to work with! Next time I think I might add some crushed peanuts as garnish with the basil before serving!
