Alaska Salmon Bake with Pecan Crunch Coating

This is a keeper. Fixed it for Christmas eve dinner and the family just kept eating it even while cleaning the kitchen afterwards.

Double Tomato Bruschetta

I was having a dinner party and the guests included some picky eaters and some gourmet cooks from Europe...rough combination audience. I followed the instructions just as written but there were too many people to melt the cheese so I just offered a really good regiano to add if desired. They scraped the bowl ! All of them. How does the addition of the ground sun dried tomatoes make such a difference? Got me. But it does. I won't ever use another recipe.

Sauteed Swiss Chard with Parmesan Cheese

This is better than creamed and another recipe that I have tried. I cooked enough for six and three of us cleaned the pot. I did change up the recipe a bit, adding a cup of chicken broth for the wine and two tablespoons of balsamic vinegar for the lemon juice. It was marvelous. As one commented, it is better than fresh spinach.

Chinese Restaurant Almond Cookies

I used Crisco instead of lard, but I needed to add an extra egg because the mix was too dry to stay together. May have been the size of my eggs. Came out OK, but not the best cookie ever.

Too Much Chocolate Cake

Deadly chocolate....they all scarfed it up. I added a dark chocolate ganache because, well, enough is never enough. Will make again for sure.

Wilted Lettuce Salad

This was just the recipe I was looking for. Bumper crop of spring lettuce and even the 'no-vegetable' teenagers had two helpings. It only served four in my house. Yeahhhh!

Beth's Spicy Oatmeal Raisin Cookies

I have been looking for the 'perfect' oatmeal cookie for years. The first time I made these, I had found it. The second batch...one week later, that's how good they are...I used two sticks of margarine instead of the butter and Crisco. They did not work. Still tated good, but the texture was all wrong. For a real treat, make just like the directions. Wonderful.

Zucchini Patties

This is an easy, quick, great dish. Good enough for a main dish. My kids, the vegie police, ate thirds.Don't know why someone had sticking problems, mine were perfect just like the recipe. A keeper for sure.

Maryland Crab Cakes III

I am from New Orleans and this is not the sort of recipe that I am used to with sea food, but I had about two cups of left over crab meat and thought I would try it. I was blown away. The crab flavor is not lost in overpowering spices. With the addition of an egg, per some of the reviews, what we had was a firm, tender, succulent delicay. My teenaged kids went nuts over them. Next time, it wont be to use up left overs that I make these. Fit for company, for sure.

Southern Potato Salad

I have been eating southern potato salad for sixty years and trying to perfect a recipe for at least forty. This one is it. No changes necessary. Season with salt and pepper as you will, it is the finest, home-style potato salad I have ever made. My kids, who hate onions, gobbled it down even with the red onions clearly visible. This is the only recipe I will ever use again. Wonderful.

Green Tomato Pie I

This was the nastiest "desert" I ever made. It was second only to the chocolate souffle when I forgot to add the sugar...chocolate scrambled eggs...Come to think of it, that was better than this. Water ran out of the pie followed by a syrup that was the consitancy of library glue. The tomatoes were still chrunchy and the color was repulsive.

Best of the Best Blueberry Muffins

I consider myself a 'good cook'. Fifty years experience and lots of recipes over the years, but this was the first time muffins ever came up to my standards. I didn't mash the blueberries because I don't like purple muffins, but otherwise I used the recipe just as is. It was marvelous. Fluffy yellow cake that didn't fall apart and thick enough to keep the berries up just like the picture. This is a fine, fine recipe. Thank you.

Dump Bars

Good texture, moist with a chewy crust. But not really very chocolatey, light brown color. I used Hershey's and didn't add the chips because my kids don't like them too sweet. I would try it again, but might use more cocoa or a better grade.

Almond Dream

My kids think that this is the magic medicine that, puts you to sleep, heals a hurt, helps you study and signals a cozy chat. My family from New Orleans used to make it and it was called "Orgeat." What I need is a recipe that keeps for the almond syrup. It is costy now that it is used for flavored coffee.
