Pork Chops for the Slow Cooker
This was SOOO good! It was a huge hit with my kids. I had at least 12 or more very thin bone-in pork chops left in my freezer that I had gotten from Angel Food Ministries, so I thawed them and trimmed off the bones. Then I layered them in the crockpot and altered the sauce recipe a bit. I used 3/4 cup each of brown sugar, soy sauce, and ketchup. Then I added 1 Tbsp. of minced garlic, 1 tsp. of ginger, 1/2 cup honey, and 1/2 cup of chicken broth. I set it on low for 6 hours. Before the last half hour, I removed the pork chops and whisked in 2 Tbsp. of corn starch and let it simmer to thicken up the sauce. Then I served the chops over brown rice and steamed broccoli and ladled the sauce over everything with a chicken egg roll on the side. Fabulous! My kids wanted more and more and more! If I have sauce left over, I plan to serve it over some chicken breasts with noodles or rice. That would be so good! Great recipe...definitely a keeper!

Easy Mint Chocolate Chip Ice Cream
This was a fabulous recipe! We made it as is, but we used mint extract instead of peppermint as another reviewer suggested, and we ground the chocolate chips in the Magic Bullet. It only lasted about 24 hours! Now we're making a variation using the same basic recipe. We used 2 tsp of vanilla extract instead of 1 vanilla and 1 mint, and we added ground Oreo cookie instead of chocolate chips to make Oreo Cookies & Cream. It's a bit sweet for me, so I think I'll cut the sugar in half next time, as the Oreos really sweeten it up, but it tastes SOOOO good. This base recipe will be my staple for all ice cream flavors from now on.

Apple Fritters I
This was so easy to make and very yummy! I added 2 teaspoons of vanilla and 2 teaspoons of cinnamon to the recipe, and it was perfect! Not too sweet, either. And iInstead of confectioner's sugar, I sprinkled them with cinnamon sugar, and it added just the right amount of sweetness and flavor. Delicious! I also chopped the apples, cooked them in the microwave for 5 minutes before stirring them into the batter, and then scooped out 1/4 cup at a time to pour into the 4 cups of hot oil in a skillet. Absolutely perfect!
