Rolled Buttercream Fondant

My first review! This recipe was so easy AND it really worked. Followed exactly. The most helpful hints from other reviewers: make sure to lightly frost cake first and roll on mat/wax paper to assist with transfer to cake. Some say dust with powdered sugar, others said cornstarch. I think cornstarch was a little more effective and was absorbed better for a more polished finish. To add color, use a small amount of frosting dye and knead in until uniform. Thanks for such a great, easy and inexpensive (compared to the pre-prepared store bought stuff) recipe. Can't wait to try it again.

Italian Potato Salad

Easy to prepare. Followed recipe as written(with the exception serving in lettuce.) Very colorful,fresh and light tasting especially with fresh tomatoes. Olives add nice zip. My family always prefers extra virgin olive oil over mayo it held true with this recipe. Finding a mayo free potato salad was wonderful. Thanks for sharing.

Molasses Crinkles

Wonderful! Just like I remember! My absolute favortie recipe. Not too hard, not too soft. Just the right amount of spice and they flatten out nicely without being a pancake. I used 6 TBS shortening and 6 TBS canola oil to make it a little more healthy. I will probably try it with some part wheat flour in the future. Perfect! Thank you Elisa!

Lemon Icebox Pie III

Have made this twice. Followed directions exactly, one time using lemons and one time using limes. Easy to lighten up using low fat cream cheese and fat free sweetened condensed milk. Super easy, convenient ingredients and fabulous taste. Great low investment, high return dessert--my favorite kind. Rave reviews from all.

Easy Arugula Salad

A fantastic salad. Lovely presentation. Very simple, quick, accessible ingredients. Fabulous flavor. I always get rave reviews. A favorite when arugula is plentiful at the farmer's market. Avocado is wonderful addition, but a great salad even without. Thanks for this keeper!

Libby's® Pumpkin Cranberry Bread

Very yummy. Recipe is very flexible- I've reduced the sugar, used a variety of flours, reduced the oil and added applesauce. Every time it comes out moist and full of flavor. I do like to double the cranberries because we like the tanginess. A hit with all my kids and a great way to use up fall pumpkin. (Never use canned when we have so many pumpkins begging to be cooked up.)

Gnocchi with Sage-Butter Sauce

Wonderful! Used on homemade gnocchi. Super simple, had all ingredients on hand, and made plenty for a very large batch of gnocchi (probably more than 24 oz). Preferred over red sauce and cream sauce by my whole crew.

Spinach Gnocchi with Gorgonzola Cream Sauce

Great gnocchi recipe. The dough was perfect. I modified the recipe to serve six. Taste and texture was still perfect and cooked up nicely. The cream sauce was great, but made more than enough for even the increased amount of gnocchi. Gorgonzola was a very mild taste and very, very rich. Enjoyed by all!

Cilantro Serrano Cream Sauce

Excellent as written! I also have used light mayo and half cream/half sour cream. Spice is just right. Just like Gringos green sauce which my family devours by the bucket.

Rummage Relish

This is a great recipe to use an abundance of green tomatoes. Here in Houston tomato season is over at the end of June, but we're still getting peppers and cukes, so everything except the cabbage and onions came fresh from the garden. I did salt the veggies and squeezed them dry, but did not rinse. I also cut the sugar in half as my family doesnt care for sweet relishes/pickles. Used a small food processor to roughly chop veggies. Wish I had a bigger one. Tasty, fragrant and visually appealing product. My house smells fantastic. Excellent spice combo/ flavors. This will be standard end of tomato season fare!
