I love, love, love this recipe, and I would give it 5 stars if it weren't for one thing...the combination of herbs and the measurements given by the recipe tends to be too overwhelming especially for my family. (I will take it one way or the other...) I have made this recipe several times with some minor adjustments. I, too, cut the temperature to 425 and I gauge the amount of time based on when I think the potatoes are done (generally 30-35 minutes). I definitely use red potatoes with the skins on b/c they crisp up so nicely. I cut the herbs in half, especially the red pepper since I have small kids. Overall, the flavors, the way the potatoes get crispy and tender at the same time...make this a 4 star recipe.
