Amazingly Easy Irish Soda Bread

Made this today for my irish grandmother's birthday party and everyone loved it, including her. I only basted with the milk/butter just before I put it in the oven and sprinkled a little sugar on top at that time. Left it alone and it was done in about 45 minutes. So easy! *** My three year old loves raisins so we made a second loaf with raisins and she was able to pretty much make this bread by herself. This is the easiest bread I've ever made.

My husband, our friends, and I thought this was good. Topped with more mozzarella, parmesan, and parsley and served with a salad and crusty bread.

Chicken Cordon Bleu II

This is really good. I am not sure if it is the best I have ever tasted but it was definitely really good and I will be making again. Don't skip the wine sauce! I put it on the side and dipped the chicken in instead of pouring over since I was not sure if we would like it and it was really good.

I really liked this. It had a strong onion flavor but I like onions so it was okay. Next time I may cut the onion amount in half though. Even my husband and kids liked it!

Homemade Flour Tortillas

This just turned into a big sticky mess for me. I have never attempted my own tortillas before so I wasn't really sure what to expect but what I came up with needed a LOT more flour just to be able to work with. It was still really sticky when I tried to cook one but it just didn't work out. The taste was close to a pancake mix pancake. I don't know what I did wrong as the the instructions and ingredients were simple. It just didn't work for me. I am giving it three stars because it must have been my error somewhere but I will not be trying these again.

All Day Apple Butter

This is really easy to make and it tastes great! I have made my own applesauce for a long time now but it never occured to me that apple butter would be just as easy. Definitely keeping this recipe, thank you for sharing!

Easy Vodka Sauce

I make this all the time. I use one can of crushed tomatoes or diced tomatoes and one can of sauce. I use a shallot instead of the onion and I add the vodka last and allow to simmer while pasta cools. We love this sauce.

Philly Cheesesteak Sandwich with Garlic Mayo

Not authentic Philly Cheesesteak but we loved this! I used a sirloin steak and partially froze so that it was easy to slice very thin with a sharp knife. Made six sandwiches - some with veggies and some without. Added sliced mushrooms. Simple, inexpensive and so fast, I will never buy frozen sandwich steaks again! Did not use garlic mayo because I do not like mayo.

Pierogi (Polish Dumplings)

I thought these were okay. The dough was very sticky, a little to hard to work with so I had to add a lot more flour to be able to handle it. The final taste was pretty bland. We don't like sourkraut so I just used the potato. The kids had a ton of fun making these but wouldn't eat them. If I make again, I will add something a little more flavorful.

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

I am not an egg eating person so I have no idea if they taste good but they looked perfect! I made Easter eggs with them and then made deviled eggs from them to take to dinner. Everyone ate them up so they must have been good.

Cornell Chicken Marinade

I am really not sure about this chicken. I want to like it but the flavor is so strong it was hard to eat a whole piece. I used boneless skinless breasts so maybe that was my problem. I did baste instead of marinating so it wasn't salty (althought I did reduce the salt) but the overall flavor was a bit overwhelming. I will try it again with leg quarters or bone in breasts. It smelled amazing while it was cooking on the grill. I really want to like it. As a baste, it was quick to throw together. I grilled it on low until it was 160 degrees and then kept warm on the upper rack in the closed grill with the heat turned off. It did make perfectly moist chicken breasts. I can't even imagine how strong the flavor would be if the chicken marinated for 24 hours. Update - I tried again and I tried to like it but I just don't. Sorry.

Best Spanish Rice

I followed the recipe except that I doubled the onion amount. Not my favorite recipe but my husband did like it a lot. I will make it again but probably add some browned ground beef and corn to it or something after it is cooked through and make it a whole meal.

Chicken Cordon Bleu I

Yum! I just got done making and eating this for dinner and we loved it!! I forgot to add the cheese to the top but we didn't even miss it. I used plain bread crumbs because that was what I had and I added some italian seasoning to them. Excellent tasting recipe and simple to make!
