About this Cook
Married, one son, and am a conference planner for groups ranging in size from 5 to 5,000 people for the Attorney General of California. I'm a curious mix of practical and dreamy..... My favorite activites range from looking for seashells along the tideline, travel/ explore new destinations, whitewater rafting, boating with our yacht club, gardening, reading, entertaining family and friends at home, wine tasting, Rat Pack music, croquet, picnics, 4x4 wheeling on No CA trails, camping, riding quads and girl's weekend away. But the most important thing to me is my husband who is my best friend. I love date night, get away weekends and private time with him more than anything else. After 10 years of marriage, I still love him madly, but most importantly I still like and respect him! We complement each other perfectly!

Southern Ham and Brown Beans
Thinking what to do with the ham bone from our Easter dinner and decided to make the family's favorite stand by; Ham and Beans!!! Wonderful, easy, versatile recipe! Only two things I did differently was to soak the beans the night before (which cuts down on the cooking time) and then cooked them in chicken broth vs water. BEAN 101: DO NOT add salt until the beans are cooked; adding salt during the soaking process or while cooking make the beans hard. Wait to the end and season to taste. Excellent recipe!

Lori's Spicy Chipotle Lasagna
Used 2 chipotle peppers and 1 tbsp of adobe sauce for the perfect degree of spiciness without overwhelming the other flavors within the lasagna; sauteed fresh spinach, chopped very fine and added to the cream cheese; 2 zucchini's and sauteed mushrooms coarsely chopped and mixed into the sauce using petite diced tomatoes flavored with basil, oregano and garlic. Mixing the zucchini and mushroom into the sauce helped address the issue of the lasagna not having enough layers as many reviewers noted. Quite possibly one of the best lasagna's I have ever had. And I believe that says it all....

Zesty Porcupine Meatballs
Nice, basic recipe for a beginning cook. A quick, easy and satisfying supper that will appeal to a variety of taste buds. 4 stars as my son loved this recipe, however I found the meatballs to be dry and in need of extra seasonings, and the tomato soup mix to taste, well, like tomato soup. Not sure how you can "jazz" it up, but definitely worth tinkering with. Thank you for posting Michelle.
