About this Cook
Married, one son, and am a conference planner for groups ranging in size from 5 to 5,000 people for the Attorney General of California. I'm a curious mix of practical and dreamy..... My favorite activites range from looking for seashells along the tideline, travel/ explore new destinations, whitewater rafting, boating with our yacht club, gardening, reading, entertaining family and friends at home, wine tasting, Rat Pack music, croquet, picnics, 4x4 wheeling on No CA trails, camping, riding quads and girl's weekend away. But the most important thing to me is my husband who is my best friend. I love date night, get away weekends and private time with him more than anything else. After 10 years of marriage, I still love him madly, but most importantly I still like and respect him! We complement each other perfectly!

Mock Filets
The flavor was good with a texture very similar to meatloaf. Overall, I found it to be too dry, and I suspect the 3/4 cup of breadcrumbs was the culprit. Perhaps reducing it to 1/2 cup may solve the dilemma... My husband and son approved of it, therefore, it will remain in the "once in a while" file. Overall, this is a solid 3 star recipe as written. Rosemary Potatoes with Roasted Heads of Garlic
Superb! Recipe is wonderful and is easily modified for many tastes. I usually use the fingerling red, white and purple potatoes for color, and 1/2 cup of white wine and 1/2 cup of chicken or vegetable stock for more complexity in the overall flavor. To amp of the level of sophistication add 4 ounces of gorgonzola cheese to the mix. It makes the most creamy sauce imaginable. NOTE: to keep your garlic from drying out, brush the top with olive oil, sprinkle with salt and pepper and cover with a very thin slice of butter prior to baking! Your taste buds will thank you! Enjoy!!!

Over the Fire Scalloped Potatoes
This recipe is a staple for us while camping. Little fuss, little muss! We rotate back and forth between cream of mushroom and chicken soup depending on what's grilling... HELPFUL HINT: To cook a little faster precook your potatoes, but do not slice them until you are ready to cook - this saves on propane or briquettes. Or buy the Simply Potatoes which are already pre-sliced and ready to go. Great timesaving steps!!!
