Slow Cooker Cream of Potato Soup
Great base recipe. My slow cooker was filled to the brim. You will need a large crock pot for this one, or cut the recipe in half. I also added some corn startch at the end because it was still to thin. I have two quart size bags left in my freezer that I will be heating up for lunch out on the ski slopes. We added cheese and bacon bits (buy the bag of real bacon bits, it sure beats the mess that bacon makes, costco sells a large bag that is reasonable, that's a staple in my house).

Slow-Cooker Chicken Tortilla Soup
This one was a big winner in my house. I did put the chicken in frozen then shredded it toward the end. We also used the last of the bag of tortilla chips (where they are all crunched up anyway). Then it needed sour cream. The next day we ate leftovers and it was even better, still needed sour cream on top, but then we also added some Pico Pica (hot sauce) to liven it up even more and that made a huge difference. I will be making this one again at the condo on the ski slopes for a nice warmer up for lunch.

Barbeque Beef Casserole
I gave this one 4 stars becuase it needed some tweeking. I don't use beef in my house, only elk (since my husband likes to hunt). It didn't come out gamey at all. I also used only one box of corn bread mix and that was more than enough. It also says that it will serve 12, not in my house. The whole 9x11 pan was gone with only 5 adults and 2 kids. It was a winner in my house. Everyone asked me to make it again sometime soon.
