Derby Monster
About this Cook
I live in Fort Worth, Texas. I love my state and all the unique cuisine it has to offer. I have taken plenty of cooking classes and love to expiriment on new foods and flavors. I am half Hispanic and half German, which is why I end up expirimenting a lot having a lot of familial recipes that come along with my background. ~~~ That's my dog Derby on my profile pic. I have gotten into cooking healthy for dogs too, she rather enjoys her made for doggie supa de albondigas and chicken and rice.
My favorite things to cook
I love to cook anything that has lots of flavors to it. I like recipes that can be made for chicken or fish. I have a great aversion to fish, but my family eats fish every Friday, therefore it is easier for me to cook both a fish and a chicken meal at the same time using the same ingredients (except for the meat).
My favorite family cooking traditions
I love the holidays around our house. There are lots of traditions that have been combined. We have pan de polvo (mexican cinnamon cookies) during the holiday season from Thanksgiving through Christmas. Enchiladas, carne guisada, and German stew are among favorites as well.
My cooking triumphs
I managed to make the most perfect beef tenderloin last Christmas. It ranged from well done to rare. I thought there was going to be a lot more to it, but in all it turned out rather simple.
My cooking tragedies
When I first started cooking, I managed to burn anything that had to do with bread. Rolls, pizza dough, broiled toast... it was pretty pathetic.

Soda Cracker Candy
I've been making this recipe for years and around my house it is called "crack" since it is soooo addictive. When made, it is gone in less than 24 hours which requires a second batch to be made promptly. My cousins visited from Minnesota and ate the whole batch in the span of 5 hours. I would say it should be a staple in everyone's recipe collection.

Grilled Corn with Cilantro Lime Butter
I used to live in South Texas close to the Mexico border and this brings back those crazy days of running across the border to shop, drink, and stop at an elote stand to get some corn. It taste almost the same! The only difference was that they used mayonnaise instead of butter and tamarido or lots of chille seasoning. I loved this recipe just the way it is, the butter is amazing and really good on skirt steak! Thanks!

Hot Spinach and Artichoke Dip
This is wonderful, I make it on a consistant basis. I also adapt it to make it a complete dish with noodles and chicken. It's a party pleaser! (for a little heat, I add chili pepper flakes)
