Rosemary Lemon Muffins

This recipe is so delicious! I did make a few changes to make it healthier - I swapped the AP flour for white whole wheat, and I used 1/3 cup of canola oil instead of 1/2 cup of butter. I also made a loaf of bread instead of muffins, baking it in a standard loaf pan at 350 degrees for about 45 min (lower oven temp to prevent overbrowning, since the loaf had to bake longer than muffins would have). I highly recommend this recipe!

Gluten-Free Granola Bars

So yummy! To make these a little healthier, I subbed agave nectar for the corn syrup and brown rice cereal instead of regular rice cereal... Will be making these again!

Hearty Whole Grain Muffins

I'm giving this five stars because I think that, with the added sweetness that the author suggested in their review, this bread would be perfect. I tried omitting the sugar to make the bread healthier and it was still tasty, but it felt like something was missing. Next time I'll add a bit of stevia or agave to make the bread sweet but still healthy. I also used white whole wheat flour instead of all-purpose (healthier), used 3/4 cup of wheat bran (didn't have Cream of Wheat or bran cereal so I upped the amount of wheat bran to compensate), and used one chopped apple instead of raisins (hate the things!) I'm looking forward to trying this bread again with a bit more sweetness.

Best Ever Banana Bread

So yummy! I made a few changes to make this a bit healthier. First, I used white whole wheat flour instead of all-purpose. I switched the amounts of buttermilk and oil (1/2 cup buttermilk and 1/3 cup oil), and I used 1/4 cup brown sugar plus three tablespoons Stevia extract instead of the white sugar. It was plenty sweet and SO DELICIOUS! Highly recommended.

Miso Soup

So delicious and easy! The first time I made this, I couldn't find dashi anywhere so I subbed in chicken stock. The soup came out good, but I was finally able to find dashi granules at the Asian market, and it made ALL the difference.

Creamy Butternut Squash With Cinnamon Soup

Delicious! Baked the squash first as other reviewers suggested. Also left out the half-and-half to make it healthier; the soup was plenty creamy without. Next time I'll skip the cayenne pepper.

Vegan Pancakes

Delicious! I'm not vegan but I still found these to be a tasty breakfast treat. Switched up the AP flour for some whole wheat pastry flour, and it worked perfectly. Will definitely make again.

Teriyaki Pork Tenderloin

Mmm! This recipe produces the moistest pork EVER, and the flavor is great. However, I strongly suggest grilling the pork on the good old BBQ instead of baking it. It really brings out the flavor more. Great recipe!

Light, fluffy, and delicious! Don't be afraid to use regular whole wheat flour instead of whole wheat pastry flour. Also, I substituted the eggs for egg beaters.

Egg-Free Low-Fat Oatmeal Cookies

These are sort of tasty, but certainly not what I'd call a cookie. They're more like a sweetish, chewy muffin top or scone. The texture is very springy. I bumped sugar up to 1/3 cup of brown and white sugar each and they still were not very sweet. Also, I don't know if my oven is messed up or what, but I found the baking time for these to be waaaaay off-- they need at least 18-20 minutes.
