Hot Artichoke and Spinach Dip II

This recipe, if you buy pretty good ingredients, will turn out just fine. I used frozen spinach and frozen artichoke hearts. I drained them really well. If you want to add some kick... you could put paprika, chili sauce and some red pepper. I like chopped red pepper and green onions on my hot dips. Overall it's a good recipe to start with.

Parmesan Crusted Salmon

I like this recipe b/c I was able to mess with it a bit. My husband can't have soy so I turned this into an Italian style dish. I sub. balsamic vinegar for the t. sauce and then I added some lemon zest to the bread crumbs. We topped it with a fresh tomato, basil and bread crumb salad.

Chicken and Summer Squash

Hit the spot/easy! I did add a little to the recipe like green onions, more tomatoes, and some spices. It was a little bland in the original form for me. I was looking for something light and easy- this was the trick. (Note: the veggies were really soft so hope you like that.)

Heavenly Halibut

This was fantastic. We did not have a lemon handy (substituted white wine vinegar). An easy 5 stars with the lemon I'm sure. Baked at 350 for 8 minutes, flipped it, put the topping on, and broiled for another 3 minutes (came out perfect). Will definitely be making this again!

Lemon Zucchini Bread

Great! I printed this recipe off a couple years ago and I always make it this time of year. I substitute butter for the veg. oil and it turns out great. You can also add in some other spices that are typical 'pumpkin' spices.

Orange Cream Cheese Frosting

Great tasting just hard to make look "pretty". I had to put it in the fridge right away. Everyone loved it on a gluten free spice cake with orange marmalade filling.

World's Best Lasagna

Wonderful!!! I had to add more sauce from my freezer b/c I wanted to really cover the noodles. I also made it with rice pasta for a gluten free meal. I didn't even need to boil the pasta first. It sat over night before cooking it. Timing for cooking was perfect.

White Chili with Ground Turkey

It's still cooking and it's great. I'm notorious for throwing in what I have. I did add some crushed tomatoes and some garbanzo beans. I love the smell of this soup. The cinnamon was a great touch.

Downeast Maine Pumpkin Bread

Tastes wonderful. It cooked uneven and usually I don't have this problem on convection bake. I cut the sugar in half... maybe that is why it was thicker at the bottom. I liked the spice mixture and amount of spices.
