Refrigerator Pickles

These are very sweet and tangy which is how I like them. Onion and green pepper were a nice addition. I made as directed except for slicing thicker. My kids liked them, too. I love them the way they are, but I would agree with the suggestion to cut the sugar for those who don't like their pickles so sweet.

Spaghetti Sauce II

We enjoyed this recipe. I used tomatoes from my garden instead of canned and only 1 can of paste. I did not have meat on hand, but I added diced zucchini because my garden is overflowing. I only had time to simmer it for a little over an hour, but it turned out really good. I think the red wine is what really gives it the restaurant style flavor. The red pepper flakes gave it a great kick!

Lemon Zucchini Bread

This was pretty good, but my family all agreed plain zucchini bread is better. The lemon and cinnamon together just didn't seem right to me. I made two loaves and tried a lemon glaze over one, but it still wasn't lemony enough. It just tasted like normal zucchini bread with lemon in it. I still gave it 4 stars because the loaves disappeared quickly at the potluck I took them to.

Fabulous Zucchini Grinders

These turned out great for me. I followed the recipe exactly except for using 1 zucchini and 1 yellow summer squash and adding an onion. My kids asked for second helpings and were happy to eat the leftovers for lunch the following day. I tried the recipe again last night without the addition of onion. I used it over pasta instead of as a sandwich, and it was equally delicious. I added extra red pepper flakes the second time, and my husband really liked it. This is definitely one of the better ways to use up an abundance of zucchini!

Fluffy French Toast

This recipe turned out great! It was fluffy, but very filling. The vanilla gave it a great flavor. I quadrupled the recipe and made a bunch of extra to freeze. It reheated well and kept it's fluffiness even after freezing. I did find that it did not make as many slices as the recipe indicated it should, but I like to soak my bread quite a bit. Overall, it was delicious! This is the recipe I will stick with from now on!
