Angel Hair Pasta with Garlic Shrimp and Broccoli

I thought this was great. The sauce was great and had lots of flavor. Next time I'll probably leave the broccoli out of it as my wife didn't care for it. (She does like broccoli though)

Blackened Tuna Steaks with Mango Salsa

I thought this was awesome! My wife loved it too. I will use a little less red pepper in the rub next time because my wife thought it was a little too spicy. I will also add another mango to the salsa to give it a little more sweetness and because it just tastes good!

I thought it was great. I also took the advice of others and added onions and garlic to the meat. The only advice I would give is make sure you get a really good seal on the dough or all of your cheese will bubble out and burn on your pan.

Italian Spaghetti Sauce with Meatballs

I thought this was great but the meatballs did not stay together. Next time I'll definitely saute them first to brown them up and then let it simmer in the sauce a whole lot longer to flavor the sauce more.

Big Charlie's Gumbo

This was a great Gumbo. I used chicken instead of beef. I also went with the andouille sausage and shrimp. I didn't use the fille powder and I thought it turned out great. My wife loved it too. This has definitely became a favorite.

Kickin' Collard Greens

I cooked this and followed several of the suggestions in the reviews. The only problem I had is the greens didn't get as soft as I would like. I cooked it on the stove top for 50 minutes at a simmer then I put it in a slow cooker for another 3.5 hours. If anyone has any ideas please let me know. The flavor of these Greens was great!

Flounder Florentine

I thought this had a very good flavor. The only thing that kept this from getting a five star review is the fact the flounder turned out really mushy. I'm not sure how to fix that.

Bulgogi (Korean Barbecued Beef)

It had great flavor and tasted great... it just didn't taste like Bulgogi. I was stationed in Korea and had this dish there 2-3 days a week for a year. The actual dish would make a great stir fry though. I think next time I'll make the dish I'll finish it with a bag of frozen stir fry veggies and this "Bulgogi" in a wok for a few minutes.

I think the cheese was a little overpowering. I'd make this again but I'd use less of the sauce on my fish. My wife loved it so I'll put more on hers and less on mine.

Grilled Asparagus Salad

This was good, almost too lemony though. I would definitely marinade the asparagus in the olive oil/lemon mixture for a few hours prior to grilling them.

Caramel Apple Pork Chops

This was great. Wasn't too sweet like the name implies. I did take the suggestion of another review and I sprinkled garlic powder, onion powder & black pepper on the chops & sauteed them in olive oil, on medium-high heat, browning them for 5 minutes on each side, then placed them in a small baking dish. In a separate skillet, I sauteed a medium chopped onion in (salted) butter. After it was tender, I added a bit more butter to the skillet because the onion had absorbed most of it; added the brown sugar mixture and one thinly sliced Granny Smith apple; simmered for a few minutes until the apples were barely tender. Poured ALL of this over the chops in the baking dish, covered with foil and baked at 350F for 40 minutes; then removed foil and baked for another 10 minutes. Topped with toasted pecan bits.
