Pumpkin Cookies I

I rarely measure, but used all ingredients and half of the sugar. They were so awesome. Mine were like cake and I used half of the recipe for muffins.

Banana Crumb Muffins

Fantastic! I added 1 tsp vanilla,1/8 tsp stevia (instead of any sugar) and would probably add nuts next time. They were so easy to make and my kid was actually rolling his eyes because they tasted so good. hehe...

Chef John's Flour Tortillas

Fabulous. I used 1 cup white flour and 3/4 wheat flour. I tried to make tortillas before and they were good, but not this good. The dough came out so perfect and was very easy to work with. My kids love them! I think it took me about 10 minutes to make. A keeper!

Chewy Brownie Cookies

Wow! Mine are still hot! I bake all of the time, but rarely love what I bake. I followed the recipe just like it is, but was short of sugar and chips which turned out to be a good thing because they were a bit too sweet for me, but otherwise, FANTASTIC!

Banana Wake-Up Bars

Yummy! I put in half the amount of sugar and thought they were still too, sweet. It could have been the bananas. I added about 2 TBS of Nutella along with the peanut butter and instead of the germ, used pulverized mixed nuts. I also added dates, raisins and cranberries. Just delicious! I will make them again, for sure!

Country Pumpkin Muffins

Yummy! Fruit, veg, eggs...It's a meal! I used cranberries and raisins that were soaked in oj. I used the oj in place of water. I also used fresh pumpkin because I can't get it in a can where I live. I used a 1/2 c of white sugar and 1/2 c of brown sugar. In place of oil used apple sauce. I didn't use the cloves or nutmeg because the kids and I don't like it. These were great! Moist and mmmmm.....

Crustless Pumpkin Pie

I am no baker, but this pie was a cinch. I even had to make my own evaporated milk and it was still delicious. I was amazed how easy it was and the family could not get enough of it.

Sloppy Joes II

The kids really liked this. I thought is was way too, sweet. I follow the first part of the recipe until the ketchup. I usually use 1 8 oz can tomato sauce, instead of ketchup, 1 1/2 tsp chili powder, 1 tsp worcestershire (and hot sauce). I also forgot to buy buns and put it in a pita. It wasn't sloppy and it stayed really hot. I think I'll do that from now on.

Mom's Chicken Cacciatore

Very good. Read the reviews and added red instead of white wine a long with a little spicy peppers, fresh veggies and fresh basil and parsley. Man, it sure was delicious. It's on the permanent list. I didn't use flour and I used chicken breasts instead, too. Along with olive oil, as always.

To Die For Blueberry Muffins

I used a mix of frozen berries, a teaspoon of vanilla and 1/2 sour milk, 1/2 milk. Absolutely delicious! Just perfect! I'm sure if I followed the recipe word for word (which I never do) that these beauties would come out fantastic. I didn't use the toppings either and halved the sugar. (as always)

Gazpacho Pasta Salad

This is exactly what I was looking for. We had left over chicken that I put in the next day as well as fresh mozzarella. I did add a couple of Italian herbs and I think cilantro might be pretty good, too but I didn't have any. Yummy!

One Bowl Brownies

This might be great, but unfortunately the directions were not explained well enough. I made this by recipe, but it had a soup consistency. I didn't know if I was supposed to take it out and let it cool or what? I put a tooth pick in and it came out nearly clean. I am very frustrated by the outcome. All those eggs and lovely chocolate for something that cannot be eaten much less going empty handed to the school party when I promised to make something.
