French Apple Tart (Tarte de Pommes a la Normande)

great recipe--exactly what i was looking for! alterations included using a pillsbury pre-made crust (sorry), 2 large apples sliced thin, 3/4 c. ground almonds, only 1 egg, a 1 T. of vanilla vodka. i found that, in order to get a nice golden brown top, the baking time was closer to 40 minutes in my oven. will definitely make this again.

Cottage Cheese Chicken Enchiladas

awesome! the left overs were great too! i added a can of trader joe's cuban style black beans to the chicken (used what was left of a costco rotisserie chicken after the breasts were removed). used 10" flour tortillas. will definitely keep this in my rotation.

Classic Bran Muffins

fantastic recipe! i use 1 1/2 cups kellog's raisin bran (did not add the 1/2 cup raisins as a result). also used 1/2 cup brown sugar and 1/4 cup oil. sprayed the muffin pan w/ pam cooking spay. the muffins are deicious!!
