I really enjoyed using this recipe over Christmas 2008. I made it several times before trying to practice what I would do for Christmas morning for my large family gathering. I used bacon cooked up ahead of time. But always used the fresh green peppers and onions. Also, I never made it ahead of time (except cooking the bacon bits), just put everything together and baked it then. I found myself enjoying the leftovers just as much with a quick microwave warm-up. Mixing eggs with flour and milk makes the eggs serve more people with less egg. I am so happy to have this recipe in my kitchen to refer to often.
