Raspberry and Almond Shortbread Thumbprints

After reading other reviews, I added an extra 1/4 cup of flour (but needed a tiny bit of milk for moistness), I rolled the balls small and used a chapstick to make the indentation. I then put them outside (it's winter in the Yukon...no need to use the freezer to chill!) for 10-15 mins and baked for 15 mins, turning pan around about 1/2 way through. They were so pretty and turned out perfect. Delicious!

Easy Lemon Cookies

These were super easy and delicious. In reading other reviewers' comments, I made the following changes: use 2tsp of lemon extract and the zest of 1/2 lemon, roll the balls quite small (quarter sized) because the cookies spread and become quite large, double roll them in icing sugar, and really keep an eye on them as they burn quite easily on the bottoms.

Broccoli and Tortellini Salad

Delicious! Make sure to cook the tortellini al dente and blanch the broccoli in the boiling tortellini water to save on time. I omitted the onions and raisins but kept everything else the same. Yummy!

Cream Puffs

Super easy...the first time I made them they turned out perfectly! I didn't change the puff batter, but instead of vanilla pudding I just used whipped cream with a little vanilla and icing sugar thrown in to sweeten it. These were delicious and so light and fluffy! Note: If you don't have a mixer, just use a wooden spoon in a LARGE bowl and beat the batter hard when you add the eggs; at first it will be lumpy but the batter eventually becomes sticky and consistent. I'll be making these for my next party!

Saltine Toffee Cookies

Delicious! IF you follow these rules: 1. Line cookie sheet (with sides!) with foil and spray with Pam 2. DO NOT stir the butter and brown sugar! Every fibre of my being wanted to stir, especially at the beginning, but don't do it. It takes care of itself. Just put it on med-high, wait until the sides start to boil, then start your 3 min timer. 3. Watch the cracker/toffee mixture in the oven very carefully! My first batch only went 5 1/2 mins but it was enough to burn it beyond repair. Toffee is very touchy and all ovens differ so don't put the timer on for 6 mins and walk away...I learned the hard way! Other than that, it is an amazing recipe that people really go crazy for. I live in the Yukon so I just put it outside for an hour and it was ready to crack into bark-like pieces. Yum..thank you for the recipe! :)

Jamie's Cranberry Spinach Salad

Such a simple and delicious spinach salad. Toast a bunch of almonds and make extra dressing and it's very simple to put this together at the last minute! All of the flavours compliment each other wonderfully, thanks for sharing!

Harvest Pork Stew

I used one apple and it was amazing! I followed the recipe as written but added sweet potatoes and parsnips (because I wanted to use some leftover ones in the fridge). I also added a little flour mixed with water at the end to thicken the sauce. Seriously, this recipe is perfect and my guests raved about it!

Special Buttercream Frosting

This buttercream frosting is like the kind you get from bakeries; very light and fluffy and not too sweet. It colors really nicely too. When you mix the butter/shortening and icing sugar, it will look crumbly at first, but just keep blending and it eventually it becomes a thick paste to which you add the whipping cream and vanilla. Believe me, the extra blending time is worth it! Delicious.

Four Egg Yellow Cake

I've made this so often, I now have it memorized! It always turns out perfect, whether you're making cake or cupcakes. Make sure you blend the butter/shortening and sugar VERY well and sift dry ingredients (I combine them in a separate bowl and whisk to add air). Use cake flour if you have it. The "Special Buttercream Frosting" recipe on this site is delicious with this cake!

Chocolate Fudge Buttercream Frosting

Amazing! I didn't have the hot fudge topping so I used chocolate pudding (I had a Snack Pack in the cupboard) and it turned out delicious. Not overpowering and really light and fluffy. :)

Chocolate Cakes with Liquid Centers

I make this for desert when I have people over for dinner and my guests are always impressed! One tip: use a whisk to mix the chocolate into the egg mixture...it makes the batter fluffy and smooth. Serve with a scoop of vanilla ice cream or whipped cream and some fresh fruit and voila! you have a gourmet dessert.

Artichoke Spinach Lasagna

I brought this to work for an Earth Day potluck and everyone loved it! I used ricotta instead of feta (I added most of it into the sauce and put some on top), I used 1/2 the broth and and no-bake noodles but other than that, I kept everything the same. Delicious!

Good Old Fashioned Pancakes

I love this recipe! I use it all the time, and sometimes when I'm alone I scale it down to 1 serving and throw a few chocolate chips in there. This recipe never fails to produce a fluffy, delicious pancake.
