Grandmother's Buttermilk Cornbread

Reviewed: Jan. 2, 2015
Made this yesterday. I used 1/2c regular flour and 1/2 whole wheat flour and regular milk with a bit of lemon juice. It came out pretty good. It was a little drier than expected but I think that may have been due to using the wheat flour (or I'm used to southern corn bread). Overall, I'd make it again and my husband approved.

Grandma's Chicken Noodle Soup

Reviewed: Aug. 12, 2014
I was sick yesterday and out of canned stuff so I figured I could attempt making my own. It came out pretty good, but I made substitutions based on what I had...which included a mix of chicken and vegetable broth, some frozen/canned veggies, and canned chicken (my grandmaw gave that to me, I've been wondering what to do with it). I used Italian seasoning, marjoram, and a dash of Tony's Chachere's, and I threw some angel hair pasta in the mix because I don't have egg noodles. Came out good, better than the canned stuff. Hopefully next time I can use a rotisserie chicken though.

Absolutely Fabulous Greek/House Dressing

Reviewed: Aug. 8, 2014
I knocked this down to 10 servings. I thought I had red wine vinegar, but it turns out I just had red cooking wine, so I used half that and the other half rice vinegar to get the vinegar portion. Still turned out really tasty on my homemade Greek salad today!

Easy Batter Fruit Cobbler

Reviewed: Aug. 8, 2014
Not quite like the kind of cobbler my parents made, but still a very tasty and super easy cobbler recipe. I made mine with apples, and I added some vanilla and apple pie seasoning to the batter before baking. Came out great.

Stuffed Peppers My Way

Reviewed: Jul. 31, 2014
This is a good base recipe. The first time I cooked this I followed it as written but found it to be a little bland. I made it a 2nd time today and made these changes: I added a chicken bouillon cube to the water I cooked the rice in, I used 1/2 can of mild Rotel since I didn't have any fresh tomatoes, I probably doubled the Italian seasoning, and I had tomato basil feta on hand. It came out pretty yummy! Also, adding frozen corn to this is a great addition. Next time I'll probably add some ground beef or pork to it.

Very Easy Mushroom Barley Soup

Reviewed: Jan. 24, 2013
Yummy recipe, but I changed a few things. I used pearled barley, 4 cups chicken broth, 2 cups beef broth, added a can of mixed veggies (i didnt have as many mushrooms to put in), and I added 2 bay leaves to the soup. Turned out great. Hoping it will freeze well.

Barbequed Cabbage

Reviewed: Mar. 20, 2012
I was also skeptical about this, but I randomly bought some cabbage recently and wanted to use part of it. I have to say, it came out a whole lot better than I thought it would. Definitely don't over-do the soy sauce though. I opened the foil and moved the cabbage around a little in the middle of cooking because the pieces on the top didn't soften like the pieces at the bottom in the soy sauce. (If you do the same, remember all the hot air is going to rush towards the opening, so be careful to avoid burning yourself)

Lemon Chicken Soup II

Reviewed: Nov. 8, 2011
It was really good. I did add onions, celery, bell pepper, and some corn to it. I think I added a little too much spinach but it tasted fine. :)

Pesto Chicken Florentine

Reviewed: Jan. 4, 2011
Just finished making this not long ago for my family and I. It was great and my family loved it. I tweaked it a bit though. Per other's advice I added more spinach and garlic and used a jar of Classico light Alfredo sauce instead of the packet. I also cut up an onion and used a little Zatarain's creole seasoning on the chicken just because I love it (and being a southerner we seem to put that or Tony Chachere's on everything). ;) I'll be saving this recipe.

I really enjoyed this chicken spaghetti. My family also really liked it and it did not last very long. I will definitely make this again!

Individual Baked Eggs

Reviewed: Jan. 6, 2009
I'm not the biggest fan of eggs, but this was pretty good. I made a few this morning for my mom and I and she really liked them too. She also gave them a 5/5 rating. :)
