About this Cook
I love trying new recipes! I think it is fun to cook, and hubby likes all the creations, so most of the time he goes along behind me and happily cleans up the big messes I manage to make! That makes it even MORE fun! :)
My favorite things to cook
I really like baking best. I love desserts best of all! I even seem to prefer main dish recipes that end up in the oven. I also like slow cooker recipes, cause I get home late a lot, and it's nice to have a good dinner all ready and waiting!

For most all of the holidays we carry-in, and we make pretty good stuff!! I love eating what all the gals in our family make!

Easy Cherry Tarts
These were very tasty and very cute! I did half with cherry pie filling and half with blueberry, and forgot to add the almond extract... did not miss it a bit! I did use a 2 inch cookie cutter and pressed them down into and up the sides of the mini muffin cups... some of them baked up high and spilled all over the tops of the pans and it looked like a horrible mess when I took them out of the oven... but after I removed them from the pan they looked just fine! Everyone was raving over these sweet little treats at the New Years party I took them too!

Butter Rich Spritz Butter Cookies
*sigh* I had a tough time deciding on how many stars to give this recipe... they tasted pretty good, better than most spritz in my opinion and the texture worked WONDERFULLY in my cookie press.... HOWEVER... the dough was so thick it burnt up my stand mixer :( and I have mixed some thick dough in the past.... and they spread in the oven :( another minus in my book... and this recipe does not yield very many cookies... I am thinking a whole pound of butter (double recipe) is an awful lot to use to get as few cookies as I did... so all in all I gave it a 3... I will probably go back to my "Snowflakes" recipe with cream cheese, it works better overall for me!

Apple Enchilada Dessert
OUTSTANDING! And so quick and easy too! Hubby wanted taco salad for dinner, so I decided to look for a "mexican dessert" to top it off.. I came across this one (AGAIN... I have seen it several times, but had never gotten around to making it)... I will tell you, I am not so much a huge apple fan (except for apple dumplings, YUM), but hubby is... so I decided to make it for him... the thing is, with the syrup and all this tastes SO MUCH like an apple dumpling, but with a FRACTION of the work! Only thing I did different, was I went ahead and used the whole stick of margarine (1/2 c instead of 1/3) just because I didn't want to deal with the other small piece left over, lol... and another recipe said to let it sit in the syrup for 30 minutes before baking, so I let mine sit for about 20 minutes or so... oh yeah, and I found the 8x8 pan to be too small, so I ended up using an 11X7 pan and it was the prefect size! Try this with a scoop of vanilla ice cream and you will love it!! Oh... and one other thing.. you really don't have to DO all that other stuff and modify this recipe... it is PERFECT AS IS :) (keep it simple)
