Chicken Pesto Pizza

I used mushrooms instead of artichoke hearts, and mozzarella instead of fontina, and the whole family loved it. I also ended up using 3/4 cups of pesto (which was a whole container), since it looked a bit skimpy with just 1/2 cup on there.

Asian Tuna Patties

I found that 1/2 a cup of corn meal was overkill for 6 patties that need to be "lightly sprinkled." I didn't initially give this to my 4 year-old for dinner, since I wasn't sure that he would even try it, but after tasting a bite of mine, he ended up taking a patty to school the next day.

Quinoa and Black Beans

My 4 year-old complained before dinner that he didn't want to eat this (and I wasn't sure that he would even touch it), but after the first bite, he told us that he really liked it; AND, he even wanted seconds before he finished the other food on his plate.

Awesome Roast Beef

My wife groaned when she heard I was making another roast, but when she tried this, she was amazed at how good it was (I did add a packet of dry onion soup mix). I could eat this every week, it is that good.
