Sausage, Kale, and White Bean Soup

I've made this before as written and it was a bit ho hum. While it is a good basis for a better soup. I just chopped my kale and added it in to simmer with the rest. I also used 3 cans ( drained ) of white beans. I added 2 T. of garlic paste, 1 T. of Marjoram and 1 T. of rosemary along with salt and pepper. I used Italian sausages in casings, cut into chunks. This was the easiest for us to find and works quite well in the soup. A good hearty cold and rainy day soup.. make adjustments to suit your tastes.

Bourbon Balls II

Very good and very easy to make. I used spiced rum instead of bourbon. I used a plastic 1 Tblspn to measure each ball and they were a tiny bit less than an inch in size and I got 28 rum balls. Will be making more. I used my food processor to chop then grind the vanilla wafers and the pecans were ground small as well. A keeper! Will add this to my holiday making list. Thanks for sharing this great recipe! Good and simple ingredients most of which you have on hand.. these are my faves! thanks again :)

Peppermint Bark

This is so easy and delightfully minty. Also very festive looking and great for gift giving. I experienced the dark and white chocolate layers separating on my last batch and have since learned that the first layer should not cool completely before pouring the 2nd layer. I used the microwave to melt the chocolate. 1 minute the first round and then in 30 second intervals, stirring after each. Will make this each year during the holidays now. Thanks for a great recipe!

The Original Fantasy Fudge

This is the BEST without a doubt. Have made this particular recipe many times. To Chris who had fudge that didn't set up. If you want to try this again, buy a candy thermometer and cook until it's 234 degrees, then remove from the stove and add, marshmallow, choc. chips, and vanilla. If it gets not hot enough it will be mushy. TOO hot and it will crystalize. To have directions that read EX number of minutes on the stove just doesn't quite do it. Some people have electric stoves, others gas burners. Best to use a thermometer and not run the risk of wasting all your ingredients. I, myself, learned this the hard way.

Country-Style Steak

Made this as written but increased the gravy ingredients. I used 3 cans of broth and 6 T. of the seasoned flour. This was easy and the meat came out very tender. My husband liked this so I will be making this again. Thanks for the great recipe!

Slow Cooker Enchiladas

I was skeptical about the creamed soups and taco seasoning... but the flavor was very good. I made this exactly as written and am making it again tonight with spanish rice and beans for added sides.. recommend this recipe for ease and flavor!! It's a keeper.

Chef John's Boston Cream Pie

For those that have a thickening problem with the cream filling... add 4 Tablespoons of Wondra granulated flour to the egg yolk mixture... it will thicken up to pudding consistency. I recommend that in place of the cornstarch.

Chili Rellenos Casserole

We love chile rellenos anyway.. and it is surprising how much this casserole tastes just like them. I used Mild whole chiles in a can ( large can).. and upped the eggs to 3, the flour to 4 and used the entire can of evaporated milk. I also made 2 layers of chiles ( blotting the chiles dry onto layers of paper towel ), and cheese before pouring the batter type mixture on top. Used a 9X13 pan sprayed well with cooking spray and took it out at 35 mns.. to pour green enchilada sauce ( 1 - 8 oz can) over the top and another sprinkling of shredded mexican cheese blend, back in the oven for additional 10 mns. ..awesome and super easy!!

Classic Peanut Butter Cookies

I read other reviewers tips and took the advice of adding 1/2 cup more peanut butter as well as an additionl 1/2 c. flour. also rolled 1" balls of dough in sugar prior to pressing with a fork. baked at 375 for 12-13 mns in my electric oven. these turned out great!

Sugar Cookies

This receipe is a keeper. I will, although, suggest a couple of things. Spray PAM lightly onto your cookie sheets & wipe off excess with a paper towel. Do NOT flatten with a glass and bake longer than 10-12 mns. I baked mine for 15 mns, but am using an elecric oven. I also used White Lily flour.. and the texture is ooo so wonderful, these melt in your mouth!

These have a wonderful flavor and do melt in your mouth but they were oily and spread wayy out. Next time I will try as one reviewer did and lessen the oil and increase the sugar.. the consistency is too thin and oily. Will try again.

Key Lime Pie VII

This is a five star Key Lime Recipe. One VERY VERY CLOSE to this is Emeril Lagasse's recipe. The only difference is that it's topped with 1/2 c. sour cream mixed with 1/2 c. conf. sugar. It sounds weird but it's really good.. I've made it and received alot of good feedback. Homemade graham cracker crust is alot better than store bought!! an easy way to improve the pie from the start. be sure crust has cooled completely before pouring ingredients inside.

French Silk Chocolate Pie I

This was a big hit in my household. Husband and son both enjoyed this pie. I did make more filling since I was filling a 9" shell. I used 1 1/2 sticks butter 1 cup sugar, 3 eggs and 3 squares of unsweetened baking chocolate. This is absolutely to die for chocolate pie!

Slow-Cooker Lasagne

I used half Italian sausage and half ground beef. chopped onion, green bell pepper and sliced mushrooms. Used dried parsley...and oregano. Made these changes from reading reviews. Noodles were not cooked previously and it came out very tasty. Will use again now that summer heat is coming.

Blueberry Streusel Muffins

I made these as written...was looking for a way to use up a container of fresh blueberries. They rose beautiful with full mushroom caps on top. The streusel was just right and very tasty. They cooked perfectly browned in 25 mn in my electric oven. Next time I will add a bit more sugar to the batter. This recipe is a keeper. Thank you for sharing

Plum Quick Bread

I had my fears about this recipe because in with all the plums was a good 1/2 c. of juice. But it turned out great! The topping really adds to it and gives it a sweet crunch. Very moist. I recommend removing from loaf pans while still warm ( after cooling for 15-20 mns) Will def. keep this recipe since we have a plum tree that explodes with fruit every season. I did bake 15 mns longer than is called for. Thanks for the great recipe!
