Oatmeal Waffles

Reviewed: Jul. 12, 2011
These waffles were really good. I love the slight crunch that the oatmeal gives them. I love molasses so I was thrilled when I saw it in this recipe. You can really make this recipe your own. Applesauce for oil or use butter? Wheat flour or white flour? Very versatile. I added cinnamon, cardamom and vanilla for an added spice and flavor component. Great recipe for make ahead and freeze waffles. Thanks!

Basil-Garlic Grilled Pork Chops

Reviewed: Jul. 8, 2011
Made this recipe for dinner last night and it was really good. I didn't have a lime so I used a lemon and it was still the acidity that was needed. I grilled on gas BBQ and my husband loved it. He doesn't usually like basil but I went for it and he really liked it. Yeah! A new staple for my household. Thank you!

Coconut Horchata

Reviewed: Apr. 23, 2011
This was so good! Ive made horchata before using another recipe and it was horrible. This recipe was delicious. The almonds and the coconut add so much, and using the sweetened condesed milk made it sweet but not sugary. This is my go to recipe from now on. Thank you!

Pumpkin Pancakes

Reviewed: Dec. 1, 2010
Both my husband and I thought these pancakes were delicious. I'll definately be making these again. I used buttermilk instead of milk and omitted allspice only because I didn't have any. I also omitted vinegar, it just didn't sound good. Not sure why I would want to put vinegar in pancakes. Maybe there's a reason, I just don't know what it is. :)

Sour Cream Pumpkin Bundt Cake

Reviewed: Nov. 20, 2010
This cake was delicious! When I saw that the recipe called for 1 cup of butter I just knew I had to substitute applesauce for half. Then I accidentally put a whole cup of applesauce in while it was mixing. Oh well, I thought. It turned out so moist and delicious. I also added finely chopped walnuts to the streusel and ended up only baking for 50 minutes. I only had tangerines in the house so used the zest and juice for the glaze. Perfection! Thanks for the great recipe. I will be making this often.

Too Much Chocolate Cake

Reviewed: Jan. 23, 2010
This cake was perfect. Made it exactly as recipe stated and it came out moist and as rich chocolaty goodness! Made it for some friends for their anniversary. Brought along a good port to sip with it. They said... "Better than Costco's chocolate bundt cake". Perfect dessert!!!

Banana Sour Cream Bread

Reviewed: Dec. 22, 2009
I thought I had a good banana bread recipe, but after I made this, my husband insists that from now on I only make the "banana sour cream bread". It's moist and rich with banana goodness. I just wish I could whiddle the ingredients down to 1 loaf successfully.

Delicious Ham and Potato Soup

Delicious and so quick! This soup tastes like it took all day to make.Making the white sauce separately was genius. I only added chopped carrot and garlic, everything else I followed exactly. Thank you Ellie11.

Slow Cooker Beef Stew I

Reviewed: May 30, 2009
This was a great basic recipe. I also added my own touches to it. I added a small pkg of button mushrooms, a can of cream of mushroom soup and a tsp of dried basil and oregano. I also cooked on high for 6 hours.

Enchilada Casserole III

Reviewed: Mar. 11, 2009
Great recipe! I also added a small can of diced green chilies, olives and a can of diced tomatoes. I used the spicy enchilada sauce because the husband likes it spicy.
